Food was great . The super fries were great with the carne asada and mix of guacamole and sour cream.
The Al pastor burrito was so good. I definitely got what I paid for and motel. Was loaded with the yummiest meat and not the other way around with the other fillings.
The lingua taco topped it all off .
Great place to pull off I-70 for quick fabulous food.

I’m from the East coast and was having trouble finding good food in Colorado until we found this spot. Our breakfast burrito was so good we had to make another trip a few days later. The green sauce was delicious too. Don’t be fooled by this place being a food truck,it is EVERYTHING

Jaydi was so kind! She was great to hold a gentle conversation and made sure we were satisfied. The Al Pastor was good, the pineapple added sweetness which was beautifully matched with fresh cilantro and pork. The barbacoa may have been my favorite though, it kept me going back for more! Everything being on homemade shells just added the perfect touch to any taco. Highly recommend the one with cabbage and shredded beef though I forget it’s name. I would absolutely come back here ❤️

We have a new favorite place–SOOOO good! The birria tacos were delicious, full of meat and cheese with a perfect sauce. My mom had the tacos–one of each kind. The roasted pepper was smoky and an added treat to the meal. Love the homemade touch; service was friendly and sincere. Get there soon!

By far, the best in the valley. Best truck food, best Mexican food. Mayans wins!
The owner is so personal, and nice, always a smile! I started going when I was pregnant to satisfy my cravings, she always took care of me. Now my daughter is almost 1, and we still make this a regular stop. She fondly remembered when I was pregnant, and loves now to see my daughter enjoy her food too!
The Asada Torta is where its at!!!!!
Actually we have tried all the food, and its all good, my husband swears her Al Pastor is the best he has ever had!
She has improved the outdoor seating there, and its very nice.
But the parking can get a bit tricky as most people don’t know how to park or Just kinda pull in wherever, which makes it difficult for multiple people to find a spot that they can easily get out of. Everytime I go, people park differently, so it hasn’t been well established yet.
Maybe some plants, or simple bricks could help people figure out where to be, especially on the busy days.

It was a good food truck, I found the chicken and beef tacos to be a bit dry, but the flavours were definitely there. The veggie taco was very good though and the service was excellent. If you’re in the area, this is definitely a must-try. Support your local business.

Fantastic tacos, empanadas, burritos. It’s safe to assume everything is on point. Great sauces too. Worth a trip to Silt. Wonderful service just adds to the experience. Great job Mayan tacos staff.

Don’t let the modular-shack-on-a-gravel-parking-lot-by-the-traffic-circle setting deter you. This place serves absolutely delicious Mexican and Guatemalan food. Their Chili Rellenos are so good they’re addictive. If you’re passing through Silt on I-70, the quick exit will pay you back 100-fold in happiness. The seating is outdoors on picnic tables under a canopy near a busy street, so better to take it with you. They package everything to go anyway.
