Stopped here because I saw they had good reviews. I ordered the ribs with home cut fries and baked beans. The ribs were probably made a couple of days before they served them to me. They were not even as warm as the outside air. The one end of the 1/2 rack was pure charcoal and you couldn’t eat them. They were swimming in barbecue sauce, which is always the first hint that they are going to be bad. The fries were cooked in oil that was old and not up to temperature, they were soggy and dripping oil. The baked beans were plain, they were cooked, not smoked. The waitress never came back to ask how my food was, there was only one other couple there at the time. I really don’t see how they can have as high of a rating that they have. We hadn’t heard of Grillbillies until we saw it while passing through. The owner was at the smoker when we pulled into the parking lot. He offered to show us the smoker and offered a sample of the ribs.
We ordered a half rack of ribs, Mac and cheese, coleslaw, and pulled pork fries. The flavors were really good. The ribs were slightly dry but tender and tasted great. The mac & cheese is also good but needs a little salt. I added a sprinkle of salt and pepper and it was nearly perfect. The coleslaw is cut a little fine for my taste but has the right balance of tart and sweet and tastes fresh. The pulled pork fries were good but the fries themselves are a little disappointing. Good fries are crisp outside and soft and fluffy inside. These have no crisp exterior and are more like southern pan-fried potatoes than french fries.
While talking food with the owner and our server, they offered a sample of their smoked wings, salsa, and garlic parmesan wing sauce. The wings are large, and have a delightful smoky flavor. They could stand another minute in the fryer to crisp up the skin but they are still great as they are. The salsa was fresh with just a little heat but that garlic parmesan was fantastic. Garlic parmesan is my go to wing sauce and this is probably the best I’ve had. It has plenty of flavor with a perfect balance of garlic and cheese with a hint of spice that hits on the back end.
While everyone was very friendly, they may want to remember that diners can hear their personal conversations and might want to watch their language when customers are there. There are some personal discussions that can make strangers uncomfortable, as well.
We sat outside and enjoyed a nice view of the river, in spite of a very determined yellow jacket trying to share our lunch.

Ribs, pulled pork, green beans, fresh cut fries an absolute must. Housemade garlic parm sauce was excellent.
Would definately go with the pulled pork sandwich over the burger pork combo.
Service, location and atmosphere were all great, we love local home town places and this one was a great find. Would stop here everytime I travel this route.

Had a chat with the owner and his wife and they are some great people. Super friendly, down to earth people. My wife and I ordered pulled pork fries to go, and let me tell you something. I’ve had pulled pork all across the country. St. Louis, Memphis, Carolinas, Texas, you name it. These are amazing, win the blue ribbon fries you’ve been dreaming of. Don’t skip this place, you will not regret stopping in.

Grillbillies is our new favorite restaurant during our drive from Virginia to Ohio! The food is scrumptious, and Nora and Kim are sweet as sugar! They are so welcoming, it’s like chatting with an old friend. Planning many more stops here!

Stopped by yesterday the 1st time. I didn’t know you couldn’t get to Fayette Station from this side of the river. Ran into the large red “do not enter” signs so I turned around and stopped by Monkey’s Uncle. I didn’t know it existed. I just had a beer because I had a dinner date later. The menu had a good variety of items. I’ll definitely be back with family/friends and try out the food. It’s a fairly large place with even bigger grounds. They had small cabins to rent and spots for RVs. They also had a pavilion for events and a stage for outdoor concerts. This place has a lot going for it. I took lots of pics, inside and out.

Found this whole in the wall a couple days ago in Gauley Bridge, West Virginia called Grillbillies. Decided to try the food. We got the wings and what they call house fries. Turns out that this place is West Virginias hidden gem. The wings are the best from Florida to West Virginia. We also got an order of onion rings and a couple of their three river blizzards. Everything was absolutely perfect. The service could not be beat. I’d leave ten stars, but it only allows me to leave five. We also got three jars of peppers and weenies.
