I first heard about Third Proof through the steady buzz on Instagram. Photo after photo of beautifully crisp pizzas kept appearing in my feed. Normally I wouldn’t drive thirty minutes just for pizza—especially in New Jersey, where good pizza is never far away. But when enough people start talking about a place, curiosity takes over. In my case, that curiosity led to two visits in one week.
On the first trip, a friend and I ordered the New Haven–style pizza, garlic knots with vodka sauce, and the Lemon Zest Chicken Cutlet.
New Haven Style Pizza — $21 Thin crust, light mozzarella, heavy tomato sauce, and extra parmesan, baked until perfectly crisp. The crust has that satisfying snap when folded, and the balance of sauce and cheese makes every bite stand out.
Lemon Zest Chicken Cutlet — $17 A large chicken cutlet topped with lemon zest, lemon juice, parsley, extra virgin olive oil, and grated parmesan. Fried in avocado oil, it’s bright, flavorful, and surprisingly light.
Garlic Knots — $5 Five soft knots tossed in garlic butter and Parmigiano Reggiano, served with a side of vodka sauce for dipping.
As we were eating the pizza, I immediately thought of my spouse, who is not exactly a pizza enthusiast. I had a feeling this might be the rare pie that could win him over. A few days later we returned for round two and ordered the same New Haven–style pizza. The verdict was simple. He loved it.
I was also pleasantly surprised to see bottled birch beer on the menu, which is always an automatic order for me.
The staff were friendly, the food arrived quickly, and everything tasted fresh. One thing to know before visiting: they don’t sell slices. You’ll need to order a full pie. Fortunately, that’s hardly a problem here.
Third Proof has built a reputation for its naturally leavened sourdough pizza, made with a 48-hour cold fermentation process and high-quality ingredients. The result is a crisp, flavorful crust and thoughtfully balanced pies. Prices are fair, parking is easy, and the menu includes creative options like French onion pizza and hearty chicken parmesan sandwiches.
After two visits in one week, it’s safe to say this is a place worth the drive.
What immediately set this place apart was the quality- one bite in, you could instantly tell the quality of ingredients and the amount of effort that must have gone into perfecting their recipes. Dough had incredible texture and was the right blend of crisp with some chew, sauce was robust, and the cheese blend allowed all of the elements to balance perfectly. Really can’t decide if the square or the round were better, we loved them both equally. All cooked to perfection.
All that being said, the chicken parm was just as good as a pizza. The cutlet was HUGE, was seasoned really nicely, and had a generous amount of properly melted cheese. Garlic knots were also fantastic and the sauce paired perfectly with them as well.
Pricing was more than fair considering the quality and portion sizes. The menu isn’t huge, but this clearly is a place that put a ton of planning and thought into their initial offerings and knocked every one of them out of the park. Not every place needs to have a diner sized menu- 3PP clearly knows what they do best and put the effort in to get everything right. Having gone to almost every widely spoken about pizza joint in the tri state area, Third Proof is right there with the best of the best, you’re getting NYC or New Haven quality out here in the burbs. Customer service was also excellent, despite how busy they were- owner was personable and took the time to address everyone and make sure everything was right. Looks like we just found our new favorite local pizza place!

Ordered their New Haven Style (Thin crust. Light mozz. Heavy sauce. Extra parm. Baked very crispy), Pepperoni Hot Honey (Cheese base. Crispy cupping pepperoni. Finished with Whipped ricotta, basil, parm, and our own hot honey), White (Garlic. Ricotta. Provolone. Fresh, whole milk, & part skim mozzarella blend. Finished with basil and parm.) along with their Garlic Knots with Vodka Sauce)
Third Proof Pizza has grown quite popular since their opening back in late October of 2025. Knowing their popularity, placed the order early online to ensure the pizza would be ready for dinner time. When I walked in to pick up the pizza at my scheduled time, the pizza was coming out of the oven which meant id be bringing back the freshest pizza possible and not one that was ready 20 minutes ago sitting on top of the oven waiting to be picked up.
One of the unique things that makes Thrid Proof Pizza stand out from other local places is the sourdough crust used and of course the craftsmanship in making the pies. Pizza was delicious and made for a great meal. If you have never experienced a sourdough pizza, you really need to check them out. Plan ahead as there is no guarantee you can. Place your order and get your pizza. As the saying goes, good things come to those who wait.

Opening Day for Thrid Proof Pizzeria in Montville. Tried the New Haven Style pizza (Thin crust. Light mozz. Heavy sauce. Extra parm. Baked very crispy) Pizza luved up to it’s name. Welcome to Montville and best of luck! Pizza was tasty and a nice treat! Ordered in advance from the Slice app to guarante a pizza in case they were busy. Definitely was busy within 1st few hours of opening day.
I’m truly disappointed because I had high expectations. I thought I was going to love it, I thought it was going to be like bucky’s in Chatham, unfortunately not. Honestly a dirty burnt oven is something I can’t stay quiet on. I am assuming this place has gotten so hyped up on TikTok and are receiving so many orders which they are having a hard time managing. Maybe a pie burned in the oven & they just never cleaned it? Now all the pies after that just got placed on all those burnt remains of that dirty oven? I don’t know but, again a clean oven is essential & my pie was so black I couldn’t even eat it, I tried to take off the black burned pieces but it was still bad.
We are excited to go back and try other pies!
