There is a popular saying about the regional rivalries of Chinese cuisine: Sichuanese concern themselves with whether the food might be too spicy, while Hunanese worry that the food simply isn’t spicy enough. Based on a recent visit to Shaoshan Impression in Bellevue, the kitchen team here clearly sides with the latter sentiment. This restaurant delivers authentic Hunan heat, but the execution of the dishes proved to be a mixed, albeit vibrant, experience.

We started with the eggplant appetizer, which was a standout. The eggplant was perfectly fresh and delicate, serving as a clean canvas for the complementary dipping sauce. You should dip each piece and let it soak up the savory, piquant sauce to get the full, balanced flavor.

For the main course, we chose the signature “Panfried Sea Bass In House Special Stinky Sauce” (臭鳜鱼), a dish famous for its distinct, pungent, fermented aroma. Unfortunately, while the accompanying sauce was tasty, the sea bass itself was overly dry. It appeared to have been fried for too long, leaving the normally flaky white fish quite dessicated. The dryness diminished the overall enjoyment of what should have been a rich, textural centerpiece.

Very good Hunan food. The preserved egg in sauce and fish were excellent. The sauted pork rice was okay, it had very little pork and didn’t have an authentic Hunan taste as the other items. Recommend coming on a weekday if you don’t want to wait since it’s a small restaurant. We went on a Saturday and it was a 45min wait.

I’m sad that I can’t leave a 6/5 star review. The food is amazing, but more importantly, the employees here must love their job so much. They’re very caring and attentive. I’m gonna sit here and list everything they did to repay their kindness today.

. The lady triple checked with us and the chefs to make sure the food will be what we order. She was patient with us, went back and forth like 4 times to relay info, although the restaurant was packed.
. They asked if we wanted to move to a larger table although our group is small, because we ordered large dishes. They helped us move everything to the new table.
. Kept coming to pour wate21r and give us more napkins. At one point, we had so many napkins, I thought I would’ve been so rich had we been in COVID time still.
. Before they brought the cake out to us, they wiped clean every single inch of the table. I’ve been to places where they don’t even take all the dirty dishes away.
. We didn’t ask, but they briefly turned the lights close to our table off and gave us their own candles and lighter to use.

3rd time we tried Sichuan cold noodles, 黄花鱼, and A菜.
2nd time dinner today we were lucky to get seats early before 6pm. waiting time was about 20mins for two people on a Friday night. Again the service staffs were friendly and prompt even though they were very busy. The wait staffs were the most hardest workers I’ve ever seen and hope they are paid well. They do all the cleaning and bring water to the tables. We ordered 毛氏红烧肉,湖南肉泡饭 recommended for not spicy和茄子刀豆 were all good

The new Hunan restaurant is indeed a quite unique among many already in Bellevue. The service is prompt and friendly. The staffs all work tirelessly. Beef noodles – beef is somehow tasteless but I love the thin noodles.
Stinky tofu with hot source is very crispy and tasty good. Most dishes are all with the right amount of salt and not too oily. Though the quantity is on the less side.
Also the fish with hot source on the burner is also very good

This is surprisingly good authentic Chinese food. We waited about 25 mins for a Saturday lunch. Once seated, service is good and fast. Once you place order on your phone, waitress came right away to confirm the order and get fresh cooking going. Food came quickly and they were perfectly seasoned and cooked. The spiceness was just right for us with the two chili dishes. We had Hunan Style Smoked Sausage and it was the best I had in the US, Sautéed Pork With Green Pepper[Medium Spicy], the meat was cooked just right and super tasty, Hunan Style Braised Pork Cubes (毛式红烧肉), it was so good. Even the reheated left overs were super yummy. Definitely recommended and we will be going back. ~$80 and boxed leftover for another meal at home.
