I can’t wait to go back.
Sadly, it was severely underwhelming. I am going to go again at some point and give them a second try because I really think they could knock it out of the park with some changes. Here is my take away, and these are serious “needs a lot of attention” things.
The food was cold! Seriously. It was cold.
I went against my better judgement and got the black garlic, extra spicy. I should have tried a straight Tonkotsu broth instead.
Also note; if you are a pepper head, their extra spicy is not going to be noticeable at all, it’s very weak.
The broth, although looking great was very bland and just not anything to make you go “WOW!” All of the add-ins were cold. I understand prepping things in advance of course, however dip these things down in the boiling water or warm them on a tray in a warm oven prior to adding them to the top of the broth which takes entirely too long to heat things up. Biting into a cold soft boiled egg was off-putting. I like a cold hard boiled egg, but the contrast of a chilled egg in hot broth, was not enjoyable. Had to submerge it for a while and break it up to warm it up.
I also ordered the whole grilled squid. Again, it was COLD. Not just a little, it was very cold. I was expecting a typical grilled squid, you know, hot? Warm? I mean I would have even taken room temp… Not chilled. It wasn’t a mistake on my end of interpreting it incorrectly. When you advertise a “Whole Grilled Squid” maybe throw in “Chilled” at the end or beginning. If that is not what you are actually selling, then please address this.
The sauce on top of the squid was great, and when paired with white rice very good. Note: the only thing that was actually properly to temp during this whole meal was the white rice.
However, the guy behind the counter forgot I ordered rice, and neglected to bring it out until about 8 minutes later after I had to ask him for it. I was nearly finished by the time he brought it out. He was too busy goofing off, sitting in chairs in the lobby and attempting to be funny to his coworkers, and doing random things to be paying attention to customer needs.
I am all for the “professional demeaner” people expect from everyone to be tossed out the window, and allow folks to have fun at work, but when it is affecting the product you provide. There has to be a line drawn.
The drink I purchased was a bottled Jasmin tea; it was most definitely a low quality one. I usually consume ITO EN brand for an example of a properly good brew.
You can tell by the overwhelming chemical flavor of the bottled tea. It’s very off putting if you are not aware of this being a thing.
In conclusion I will try this place again at some point, but it will only be because of proximity or opportunity. I will not make a special trip out to this place just for ramen. I would rather make a packet at home, or go get PHO somewhere at the 20 pho places nearer to me, than drive 20 minutes for subpar, cold food.
I wish I had my temp probe with me, I really would have liked to get proper readings of the food temp. Not saying they were out of the safe ranges, but man, temp is a serious thing that cannot be taken lightly.
