Corn Maiden is an exceptional restaurant with delicious food, good service, and a nice atmosphere. We had the Ribeye for 2 and it was cooked to perfection. The Mac and cheese was GREAT. The sautéed veggies were okay (some under cooked), however for the price and the quantity, it is worth it. Another big recommendation is the Corn Maiden Salad. That was fantastic. Would highly recommend giving the restaurant a try if you are staying at Hyatt Regency Tamayo. Everything pictured plus a bottle of wine was $260 including tip at time of writing.

We had an okay experience here. The service and food were both pretty good, nothing special. We shared the 24oz ribeye for 2 and although it was good, I would say nearly a third was literally just a big piece of fat. The sides that came with it were pretty good. Service was good and atmosphere okay for a Friday night at dinner time

A very simple menu in a simple setting. We expected more from the hype. However, the service was very attentive. Charred cabbage was bland. Ribeye was excellent. I’ll skip next time.

We tried to sample as many items as we could since everything on the menu looked appealing. I ordered the steak, which good, but the chicken dish that my wife ordered was so flavorful, with a slightly charred skin that added a smokiness. It was moist and well-seasoned. The side dishes were another highlight. We started with the bisque soup, which was rich and comforting. The service was friendly and attentive. Overall, a memorable experience.

Truly enchanting experience last night. Food, staff, and atmosphere were all top notch. This was our first trip out with our six month baby and we were excited but nervous to eat somewhere nice. Everyone was so accommodating and friendly, the vibes were great, and we felt sincerely welcome.

We had the lobster pasta and buffalo tenderloin, both tender and delicious. The lobster pasta tasted like lobster bisque in pasta form, happy tippy taps from my east coast roots. Baby was also offered her own plate of cut up fruits, much to everyone’s delight. Creative desserts was how I heard about this place last year, and they lived up to my every expectation. Super fun and refreshing flavors of sorbet with yummy cake, wish we could’ve fit in one of everything hahaha

Thank you for a great experience. Wishing you all the best with the reopening!

Nestled within the serene and picturesque setting of the Hyatt Regency Tamaya, The Corn Maiden has recently reopened its doors, offering a fine dining experience that is nothing short of exceptional. As a traveling Italian cuisine culinary reviewer, I was delighted to explore the unique fusion of local flavors and high-quality ingredients that this restaurant has to offer.

The Corn Maiden’s commitment to sourcing locally grown ingredients is evident in every dish, and their limited menu is a testament to their focus on quality over quantity. One of the standout dishes was the succulent lobster meat, generously portioned and prepared to perfection with al dente pasta. Each bite was a harmonious blend of flavors, showcasing the freshness and richness of the lobster.

Accompanying the main courses were the delightful homemade blue cornbread mini loaves, served with housemade peach jalapeño jam and creamy butter. The cornbread was a perfect balance of sweetness and spice, and the jam added a unique twist that elevated the entire dining experience.

Another highlight was the large portion pork chop, which was cooked to perfection and served with a mini casserole dish of au gratin potatoes. The pork chop was tender and flavorful, and the au gratin potatoes were creamy and indulgent, making for a satisfying and hearty meal.

The appetizers were equally impressive, with options such as the Sweet Corn Bisque, a rich and creamy soup with herb oil and freeze-dried corn, and the Crispy Green Chile Strips, featuring NM Hatch Green Chiles and a cilantro lime crema. These starters set the stage for the exceptional entrees that followed.

The dining experience was further enhanced by the impeccable service provided by the two-person team. Their attention to detail and dedication to ensuring all needs were met did not go unnoticed. Frequent beverage refills and a warm, welcoming demeanor made the evening truly memorable.

To conclude the meal, The Corn Maiden offers a selection of unique and delectable desserts. The Trio of Crème Brulee, featuring vanilla bean, sweet potato-toasted marshmallow, and pomegranate flavors, was a delightful end to the evening. Each dessert was beautifully presented and offered a perfect balance of sweetness and creativity.

In conclusion, The Corn Maiden at Hyatt Regency Tamaya offers a dining experience that is both refined and rooted in local tradition. With its focus on high-quality ingredients, expertly prepared dishes, and exceptional service, it is a must-visit for anyone seeking a culinary adventure in a beautiful setting.

We had a wonderful meal here tonight — our best ever. We highly recommend this restaurant, which seems to have improved. Our service, dinners, appetizer, drinks and dessert were all great. This is the best fine dining in the Rio Rancho/Bernalillo/Placitas area, in our opinion. Try it — you won’t be disappointed.

Disappointed. It wasn’t the white tablecloth restaurant that we expected. No white tablecloths and very bright harsh lights. The service was lacking. We ordered sparkling water and received still tap water. The sea bass entre was fishy and the duck enchiladas hardly contained any duck. The chocolate tres leches cake was very small and tasted like a box mixed brownie with chocolate milk poured over. And the coffee was bitter. All of this for about $200.
We will not be returning.

Exceptional view. My steak was prepared to perfection, the side dishes were equally tasty. Services started off amazing but as the restaurant filled up, it was lacking. For a restaurant of this price I do not find it acceptable to forget to being coffee if it was ordered with our dessert. I am still ranking it hight because it was a wonderful meal with an amazing view and the staff were friendly.

Honey glazed ham and green chili infused turkey breast. A variety of seafood, moist smoked salmon, shrimp and large crab claws. Fresh gnocchi pasta and omelettes cooked to order. Plentiful salads and cheese selections.
Our waiter, Amon, is the most amazing waiter we have ever had the pleasure of dining with.
Consistently great quality meals and service over the last few years. Highly recommended.
