A new dining/cocktail concept by the team behind award winning cocktail bar, Bar Leather Apron, Bar Maze offers an innovative, integrated culinary and cocktail experience. Head chef Ki Chung and head bartender Justin Park work collaboratively to craft an omakase (curated 5-course tasting menu with cocktail or wine pairings) dinner menu and an a la carte lounge menu in which food and drink are conceived as intertwined creations.

Excellent! We dine at a lot of great restaurants and this is now one of our favorites. The food was outstanding and not a single course came short. We also appreciated that as opposed to a lot of other prix fixe menus, this one didn’t leave us feeling overly full. It was just the right amount. Service was excellent and the decor of the restaurant was just right. My only suggestion would be to change out the pop playlist for some quality jazz.

My wife and I were invited by friends to a special fundraiser dinner at Bar Maze, and we really enjoyed the evening. The ambiance was warm and stylish, and the service throughout the night was genuinely thoughtful.

The menu offered a lot of food, with each dish bringing something fun to the table. The snacks were a great start—the smoked salmon dip disappeared quickly, the anago with smoked egg yolk was rich and addictive, and the chicken skin with chimichurri had that “I could snack on these all night” energy. The choke garlic balls with caviar and ranch were a surprising combo that worked far better than expected.

The ahi course was bright and refreshing, and the scallop with “Hawaii XO” and puffed rice was both comforting and elegant. The cheeseburger course was just pure fun, and Ethel’s grill taco rice had a nostalgic, homey vibe. “Textures of a crack seed shop” was playful and full of little surprises, and the chestnut tiramisu was a cozy, satisfying finish.

The spirit behind the event made the night even more meaningful, and we were grateful to be part of it. Bar Maze is easy to recommend, and we look forward to visiting again.

I enjoy tasting menus, but pound for pound this is the best I’ve ever had. No course was weak or filler; everything served was executed wonderfully with complex developed flavors. The cocktails were pared extremely well and included an old fashioned I really had to savor. The menu changes every month, but the standouts were the wagu sushi, salmon toast, scallop, and sweet corn shave ice. Wonderful experience in a relaxed atmosphere with kind and welcoming staff.

Wowwwwww!!! Best meal in Oahu, get the bar Māze experience with the cocktail pairing, it is quite the experience for the eyes and mouth. I’ve heard great things about Bar Leather Apron for their cocktails and since it’s almost impossible to get reservations there, I was told to go to their sister restaurant because the cocktails are made with the same recipe from the same bartender (so unique and delicious!) and are made to pair with their food. With the bar Māze experience, they begin with amuse bouche, and work their way through main courses and then dessert. For additional charge, get their “masubi”, you won’t regret it. Amazing dining experience and can be compared to being a 2-star Michelin dining, loved all the flavors and intricate details that went into each course. Get reservations early, restaurant seating is limited and intimate.

Came here for the Wednesday 5:30 seating to celebrate our belated anniversary. We opted for the Bar Maze Experience, which is the Bar Maze Tasting Menu but with a drink pairing. Here is what was on the menu that day:

-Oyster, Yuzu Kosho, Purple Daikon – this oyster was so good and most importantly, shucked properly. The purple daikon was an interesting touch
-Corn Cromesquis, Smoked Trout Roe – this was literally one bite but packed with so much flavor
-Boubon Barrel Smoked Salmon Trout – the trout was so tender that it pretty much melts in your mouth. I also normally don’t love smoky things but this wasn’t too smoky for me
-Dry-Aged Kampachi, Tomato-Chojang Vinaigrette – again, the fish was very tender. The skinned tomatoes with the little rolls of cucumbers and the vinaigrette all complemented the fish very well
-Wagyu Musubi, Maze Aged Tare, Egg Yolk – this was an additional $32 so we just added one to share, since we just wanted to try it. This was more like a small sushi roll with a thing piece of wagyu draped over it. It was just okay because the beef was a bit chewy. I would probably skip this but I’m glad we only got one. I would have been mad if we spent an additional $64 on this
-Hokkaido Scallop, Sunchoke, Sunflower Seed, Brioche – the scallop was good but I didn’t love the sunchoke sauce. It was a bit too heavy and I feel like it didn’t really pair well with the scallop. The brioche was also weird. It was like this random giant hunk of bread – maybe to fill you up?
-Washugyu Flat Iron, Black Garlic, Maiitake – cooked to a perfect medium rare and was very tender. I also liked the charred romaine that it was served with
-Grape, Hisbiscus, Walnut, Blue Cheese Shave Ice – this sounds so weird but it was surprisingly good. It was like a sweet and savory dessert
-Japanese Cheesecake, Orange Blossom Anglaise – light and fluffy. Plus, you can’t go wrong with orange blossom

For drinks, the cocktails were:
-Stonefruit, pomegranate, rose, sake, champagne
-Strawberry, elderflower, tomato water, shochu, reposado tequila, citrus
-Mandarin, aloe, pandan, hojicha, gin, egg white
-Bourbon, koji-demerara, cacao
There are all cocktails I probably wouldn’t have normally gotten. They all have some strange ingredient but I enjoyed all of them. They were expertly crafted.

Normally for these fancy tasting menus, I usually leave the restaurant still hungry. Even though the bites were small here, we both left feeling full. Before we started dinner, we were already plotting what food to get after (lol) but luckily, we didn’t even need to! Bar Maze is definitely a splurge/special occasion type place so I don’t know if we’d come back, but we had a wonderful experience.

Loved this place! If Michelin came to Honolulu they would def get a star – or two. By far the BEST meal you will have in Hawaii.
Each bite was delicious and it was clear the fish was all of the best quality. Can’t recommend it more. Favorite dish was the crab one. (The only thing I didn’t love love was the supplemental bite of wagyu beef on crispy rice.)

Absolutely amazing experience here with the tasting menu. Being so up close and personal was really cool for me and I loved being able to see them out the dishes together. Everything here is truly a work do visionary and culinary art. Prepare to be impressed!!!!!
