Bar seating and ledge leaning set the tone. Think Paris tabac or zinc counters, buzzing with locals shoulder to shoulder, glass in hand, and a wink toward discovery. This is the Cave à Manger: an ever changing lineup of wines by the glass paired with small, savory plates meant for tasting, sharing, and lingering. More than an amuse bouche, less than a meal, it is about range, variety, and exploration.
Counter Reformation lives inside Parker Palm Springs, a Leading Hotels of the World property, and when you dine in Counter Reformation, valet parking is always on the house. No reservations. Ever. First come, first poured. Slide up, claim a seat, and let the night unfold.
Hidden hangout with a speakeasy feel for global wines & bites in Parker Palm Springs.

Cozy little speakeasy tucked away on the Parker hotel property in Palm Springs. The ambience can be described as a cocktail lounge with dim lights and only bar seating available in a snug little saloon. They offered tapas style appetizers and a large selection of wines. We got the hearts of palm calamari, oysters, lobster bolognese on chopsticks and faux foie grad macaroons along with a bottle of red the barmaid recommended. The tapas were all delicious and creatively presented, except the oysters which tasted mediocre. The plates are all shareable. The staff was attentive and helpful in selecting the wine.

From start to finish this food and wine experience was unlike any other as our server Edith guided us through the selection of small plates with big flavor and suggested wines to pair along the way. The wine by the glass selection is carefully curated to offer guests exceptional wines you may have never tried before! The long curved bar welcomes guests to a space filled with imagery and artifacts from churches. There’s even a little nook to sit in that’s a church confessional!

We were in PS the week before Thanksgiving for a car auction. Counter Reformation is one of the restaurants that we always try to stop by as itis excellent. Our server Brittany made some excellent suggestions regarding wine and food, and we went with them. Love their food! And the freshly made bread is 2nd to none.

Such a vibe. This spot has that hidden speakeasy charm… cozy, stylish, and effortlessly cool. All the dishes we tasted were delicious and beautifully presented but my absolute favorites were definitely the oysters, cavier quail egg bites (ordered twice) and the beef tare tare tacos. MAJOR shoutout to Edith behind the bar!! She had the best energy, great wine pairing recs, and genuinely made the night feel special. Will definitely be coming back!

Such a creative and tasty menu. The asian style beef tartare is a must! Servings fit on smaller plates, but are all filled with delicious flavor. Everything was absolutely fabulous, from the food to the decadent macarons to the service. Shout out to Brittany who took excellent care of us <3

We had such a great time at The Counter Speakeasy! The place has such a cool vibe—awesome decor and a really fun atmosphere. Our bartender, Edith, was amazing. She clearly knows her wines and helped us pick the perfect pairings for our food. She was super friendly and made the whole experience even better. Her suggestion of the spaghetti chopsticks was such a hit—it totally made our night. Great food, great drinks, and great service all around!

As somebody who works in hospitality and is also quite critical, this was one of the best experiences I’ve had this year. Brittany was a joy as our server. Every detail of the menu and dishes were impeccable. Some of our favorites were the Javier donuts and the lobster Bolognese. The truffle beef carpaccio was impeccable and of course, the iberrico ham was perfect. She guided us through what to order and the type of wine that we wanted. The candle light, ambiance, everything. One of the best experiences.

A big shoutout to Brittany, my bartender, who made the experience even better. She was friendly, attentive, and really knew her wines. Her recommendations were spot on.
Highly recommend this place whether you’re stopping in for a glass of wine or planning to stay for dinner.

Welcome to The Parker! We came on Christmas Eve to enjoy a celebratory atmosphere, but upon entering we noticed that not even a nod was given to Christmas. No decorations, no tree, no holiday display at all. We are locals and have enjoyed Counter Reformation on numerous occasions. We took a hiatus when the restaurant began a disastrous program requiring guests to pay for a seat at the bar. As if the $20 valet and $35/glass of wine in the lobby bar weren’t enough to keep guests away! Apparently their deterrence efforts have been successful. Last night, on Christmas Eve, we were the only people there! The bartenders were lovely, but the food was not. Overpriced tapas with barely a bite to share between two people. The wine quality has been downgraded too. The best part of the meal was the warm bread which we took home to make sandwiches. We enjoyed a few laughs and we will never return again.
