Food is delicious and fragrant. Chili oil is authentic and actually has spice and taste, not that mild stuff other places have. The beef in the fried noodle dish is tender and delicious, the sauce is fragrant. Cats ear noodle did take a longer time to make, but it’s all hand made. Can’t complain.
My husband got the lamb organ soup and the broth is milky white. The soup is extremely clear tasting and not gamey. Hand pulled noodle texture is on point. Not too soft, chewy.
Speciality fried pork was great and had that authentic north west vinegar sauce and taste.
There was a super annoying customer last night and the staff handled the situation very well. My husband was annoyed for the staff. Props to the restaurant. 10/10.
If you’re dining in for the first time:
-Staff does not speak English, do some research on Xian cuisine and checkout their menu beforehand so you understand what dishes to expect
-They accept cash
-Water is self service
-Staff is not intentionally being rude, there’s a cultural difference between Chinese and western dining service
-They don’t bring utensils out because they’re already at your table
-If you have any type of food allergies or dietary restrictions it’s up to YOU to figure it out and not the staff

Noodle place is such a humble little restaurant serves authentic Shanxi noodles dishes. And I cannot believe there could be such a restaurant outside of China offering that authentic and delicious Chinese food! My personal favorite is the house special fried noodle, it was so perfectly cooked and seasoned. Every one who likes noodles should try this place out!

Got their pork rou jia muo and pork scissor cut fried noodles. The rou jia muo was good but the noodles were a bit oily.

Update on July 19:
Came again with a 5 friends. Very good carb food. Pretty cheap (25 per person).
Very interesting shanxi food. Celebrated my shanxi friend’s birthday here. Their hotpot is interesting.

My wife & I comes here once or twice a month sometimes every week specially during cold days and always order the same Beef noodle soup ‘knife cut’. Beef chunks that are so tender and juicy with broth to die for!!! We come in and most of the times we do not even need to tell them our orders because they know us already. We‘ve been coming here since they changed name from noodle boy. the ‘lady’ sometimes gives us other food or appetizers to try. what a great service !!! We are coming back for more. thank you!!!

If you can’t make it back to Shanxi, China, this is the next closest thing in SGV!
I had been craving handmade noodles all week, so I came in here today for lunch and ordered the knife cut noodles mixed with tomato sauce and cucumbers.
They also had black fungus, which filled me up quickly. You can grab a plate, then load it up with veggies at the buffet bar.
I decided to be a pig and get the beef dumplings as well, since I was fasting.
I really appreciated the handmade dishes.
Would come back and try other stuff!

Fabulous little restaurant from shan xi province restaurant… wow! homemade noodles. Tender, springy.perfect .. in beef noodle soup, in pork belly gravy soup, and sesame sauce. The hot& sour soup was delicately flavored. Crispy marinated beef with crispy, flaky bun is also a must order.
There’s an appetizer cold buffet for $8.50/ plate with marinated seaweed, potatoes, brine cukes, wood ear fungus, etc. Plain cabbage stirfry is perfectly stirfried (lots of wok-chi).. crisp on outside, soft on inside. Everything very delicious. Wonderful service.

Authentic ShanXi (山西) cuisine, with noodle as their specialty. Amazing noodle texture only you could find in China. Lamb tripes are delicious. Also, cold dishes/appetizers are self serve, you can pick what you want, grab a plate and load it up!

Pretty authentic noodle place, good portion for their prices. Came here for the “lamb organ soup” recommended by friend, pretty good broth & chewy noodle, but really missing out the organ part, only lamb meat & tripes, no liver, heart, kidney…etc. like I had in Beijing. Rougamo pork, cold jelly & sautéed intestine all gets thumbs up. After ordering, mostly self-serve like water & packing for to-go. Which is fine, considering how expensive server wages are today… & it’s reflected on their modest pricing. I will be back.
