Herve Pronzato, George Efthimopoulos and Grigoris Kikis can be “held to account” for a unique dining experience that could only be had at Herve restaurant, bold, innovative, colorful, stimulating, and progressive. Our menu changes seasonally to reflect the best local ingredients at each time of the year. We work closely with farmers and suppliers to source ingredients of top quality from all regions of Greece, many of which are organically grown, others are wild, others carefully selected from local markets each morning from our staff.

PS: that Lager hits the spot
I’ve tried a few of the other Michelin starred restaurants in the city and this one is tied with CTC for my best experience.
Note: we felt that the A5 supplement was not quite worth it.
I booked a reservation for a group of 9 through the booking system on their website. There is a deposit but you can cancel up to a certain number of days ahead. The staff reached out to confirm our booking and note any dietary restrictions. They were exceptionally prompt and easy to work with.
The night of we arrived to find a cozy restaurant nestled in a neighborhood in Athens. They were fluent in English which was helpful for communication. The restaurant appears to only have one seating nightly so our almost three hour long meal was paced without rush. The first few courses came out quickly but slowed down as the evening progressed. The sommelier was helpful for those who did not choose the pairing. Those of us who did were treated to interesting wines that we may never have tried ourselves.
The food is outstanding. There are some interesting takes on traditional Greek dishes and ingredients along with some international favorites. There is so much care and attention in every single aspect of each course. It’s incredible to experience a group that is at the top of their game.
I wish the best to Herve and their future. This experience has set a new standard of fine dining for me and my friends. Thank you for an unforgettable evening.

That said, while the food itself is impressive, I found myself wanting more of a cohesive theme or narrative behind the dishes. There’s undeniable creativity at play, but without a clear sense of the chef’s story or perspective, the meal felt more like a collection of great ideas rather than a fully realized concept. Some added context about the inspiration behind the menu would elevate the experience even further.
We dined at Hervé on June 1, 2024, and 1.5 years later I still find myself thinking about this meal. Every single course on the tasting menu was delicious, thoughtful, and beautifully executed—but the seabass truly stood out as my favorite. It was perfectly prepared and unforgettable.
We chose to sit at the chef’s counter, which elevated the entire experience. Watching the chefs carefully prepare each course, explain the dishes, and move seamlessly as a team made the evening feel both intimate and special. Every chef we interacted with was warm, welcoming, and genuinely kind, which added so much to the overall experience.
The food, presentation, and pacing were impeccable, but what really set Hervé apart was the hospitality. At the end of the night, the chefs even took a photo with us, a small gesture that made the evening feel incredibly personal and memorable.
If you’re looking for a refined yet inviting chef’s table experience in Athens, Hervé is a must. This is the kind of meal you remember long after your trip is over—and one I would happily return for in a heartbeat.
Food
The dishes were incredibly well thought out. One dish in particular—quail egg with spinach, dill, and lumpfish roe—was easily in my top five dishes of all time. It’s no surprise they’ve kept it on the menu for years.
Everything was perfectly cooked and seasoned. The final dessert was a lovely little touch .
What Could Be Better
We were a bit disappointed that some dishes had optional add-ons and that an extra course was available for purchase. For us, this experience should be about the chef’s complete vision, without making guests wonder:
“Should I add these extras? Am I missing out on something?”
The wine pairing itself was perfect in terms of selection and pairing, but I would have preferred a standard pour—at least to the widest part of the glass—even if it required an extra charge. The sommelier’s pours felt very minimal.
As for coffee, we expected a bit more attention to detail—most fine dining spots usually excel in that area, but it felt underwhelming here.
Overall
Despite these small points, it was a fantastic experience with thoughtfully crafted dishes, a charming atmosphere, and friendly staff.
