Service was good, but as others mentioned before you usually wont be served by the same person which can be bothersome for some, but for us it was not a big deal.
Starting from the warm welcome, the kind and super precise staff, the atmosphere.
A special and separated mention goes to the food and wine.
We opted for the 6 courses tasting menu with wine pairing, that was incredible in the flavours and tastes, each dish was properly explained as the paired wine.
Also the view from the top floor where we seated was incredible.
I greatly suggest to have a tasting dinner there if you are a food and wine lover as me!
Came for lunch and did their shorter six-course tasting. Not a long menu, but there were no weak spots. Many dishes were rooted in classical French technique but entirely open to global inflection. Nothing leaned on gimmicks, and my favorites were the dorade, pike perch, and sweetbread.
Kingfish – A clean, composed opener. Thick-cut kingfish with gentle warmth from baharat, balanced by green apple, dill, and a light brininess from razor clam.
Dorade – Crisp-skinned dorade paired with a light poultry liver cream that added so much depth without overwhelming the fish. Sherry plums brought a subtle sweetness, while fennel kept the finish fresh.
Pike Perch – My favorite dish of the afternoon. The dish was autumn distilled. The mild, buttery fish was carried by an extraordinary, smoky eel hollandaise that literally made me pause mid-bite. A northern European comfort dish brilliantly reimagined.
Sweetbread – A daring mid-meal pivot. Crisped golden sweetbreads matched with peanut cream and a deep, umami-rich XO sauce. Maitake reinforced the caramelized notes, while tomato and radish kept it from feeling too heavy.
Venison – Perfectly cooked. Trumpet mushrooms and creamy polenta grounded the dish, while raspberry added just enough brightness. The coffee element was subtle, more aromatic than dominant.
Overall, an impeccable menu with zero misses.
My partner is vegetarian, and they had a full vegetarian menu so we could both enjoy the full experience.
• The venison was tender and flavorful, from a young stag, with just the right chew.
• The deep-sea fish was fresh, paired with a foamy seafood sauce that was both inventive and memorable.
• The veal sweetbread with black truffle was the highlight of the meal — absolutely delicious.
• The strawberry dessert provided a refreshing and elegant finish.
The only drawback was the opening “first bite” — the flavor was odd, and a cold soup that followed didn’t quite work for me. Aside from that, everything else was excellent and beautifully presented.
The atmosphere is vibrant, with a stunning view over the IJ harbor—it feels effortlessly chic and welcoming.
Chef Egon is truly a master of his craft! The yellowfin tuna, hake, and prawns? Absolutely sublime. And those sweetbreads with salted peach? Pure perfection.
As always, the wine pairing enhances every nuance of the dishes, while the service remains impeccably kind, personal, and attentive—truly enriching every moment.
In short: exceptional food, sublime ambiance, and top-notch service. If you’re planning an unforgettable evening in Amsterdam, MOS is the place. We’ll be back soon!
Presentation was outstanding throughout. Dishes started with a light touch: apple with yellowfin tuna sashimi and trout flan with crab. The only jarring note of the evening was the switch to a heavier duck roll that the red wine pairing couldn’t quite prepare us for. But the veal that followed was a highlight. I also recommend the milk bread. It wasn’t supposed to taste strongly as a complement, but was delicious.
Highly recommend.
What stood out most was the manager. Super friendly and welcoming, happy to chat and answer questions without making us feel rushed. It added a personal touch that you don’t get everywhere.
Only thing I’d tweak is the music — it didn’t quite match the atmosphere. But all in all, a place I’d happily come back to.
