We were very excited to find this local eatery that seemed to be a must on any Foodies list. 90% local, Farm to table, carbon neutral restaurant! It’s a small place so the popularity makes it hard to get in and reservations seem to be a must. We did get a late reservation and finished up early, they were able to move us up twice so we were very grateful for that!
The Mai Tai cocktail with the lilikoi foam was excellent! The table bread was also very good, nice and warm, delivered with butter and crystallized salt.
We started with the special tomato salad appetizer, which was very good but certainly not as good as peak of Summer Indiana tomato-like. You could taste the freshness and good flavor. There could have been a little bit more blue cheese crumbles on top, they were very sparse.
Our waiter recommended the hillbilly cornbread so we had to try that! He said it’s made with canned creamed corn and it was very very moist and did not disappoint! Definitely on the sweet side but I prefer that. Nicely grilled and delivered to our table warm with butter.

There are few things that give us more pleasure than perfect dining experience.
Merriman’s Waimea delivered in every catagory.
Beatiful complex and complimentary flavors in each course.
We had Tako “Escargot”, Ceaser Salad, Pa’auilo Baby Spinach, Day Boat Catch of The Day (Mahi Mahi) and Roasted Chateaubriand.
Every dish was prepared to perfection and our superior service was provided by Emiko.
So good we booked dinner for our last night in Hawaii.
Our thanks to the entire team for an awesome dining experience.

Amazing Food, amazing service, best meal I’ve had on the island. I would come here every day if I could. I had the fish special one night and it was bursting with flavor so fresh and so good. It was just absolutely perfect. Our server was super nice and friendly and amazing. They refilled our water like five times; great ambience great service great food, highly recommend! We recently dined couple times at Merriman’s in Waimea during our Big Island trip, and it was an experience we won’t soon forget. From start to finish, the evening was great.

First, the atmosphere strikes a perfect balance — polished yet warm, with a sense of aloha woven in. The space feels elegant but not stuffy, and you sense the care put into the details. The staff greeted us with genuine smiles and guided us confidently through the menu and wine list.

As for the food — outstanding. Every dish felt intentional and true to the spirit of Hawaii Regional Cuisine. The catch-of-the-day was cooked beautifully; the local beef and produce-driven sides were superb. We also made sure to try one of their signature cocktails (the Mai Tai with lilikoi foam) — it delivered.

Service was equally impressive. Our server anticipated our needs, explained dishes with enthusiasm. Little touches like that elevated the whole evening.

Yes, the pricing is upscale — but you absolutely get what you pay for. The ingredient quality, presentation, ambiance, and care make it worth it. Merriman’s Waimea is more than a meal — it’s a culinary experience that honors local flavors and talent. We’d return in a heartbeat on our next visit to the island.

This was a wonderful experience. We enjoyed the lobster ravioli, chateaubriand, and a fish dish as well as the soup of the day, mai tais, and the chocolate purse for dessert. Nothing was lacking. Excellent service from all levels. Reservations are likely necessary but easy to make.

Incredible experience! Fresh and flavorful food, attentive servers, and warm atmosphere.

We ordered the Poke and beet salads for appetizers – both were incredible.

For entrees, I had the lamb and my husband got the NY strip. Both were seasoned and cooked to perfection. Also, portions were very generous!

For dessert, we ordered the bread pudding which was so yummy and not too sweet.

Overall, a perfect dinner to end our vacation in Hawai’i

This farm-to-table restaurant was delicious. Fine dinning with delicious seafood options! The restaurant is date night vibes and is a step up from the resort food. The hummus was to die for! Warning: If you take Uber there be careful at night because it’s impossible to find transportation back to your hotel in the evening!

This was our second time back at Merriman’s and it is always a highlight of coming to the Big Island. The food is excellent but the service makes the experience special. This is one of my favorite restaurants in the world! Kathryn was our waitress this time and she was awesome.

We’ve eaten at Merriman’s two days in a row, and it’s been incredible both times! The fish of the day was amazing, and everything we tried was fresh and full of flavor. They even made a special mango slaw on the side for my son’s quesadilla — such a thoughtful touch! The service and hospitality were outstanding, and the host was so kind and welcoming.

Highly recommend Merriman’s — the food, service, and atmosphere are all top-notch!
