The Mai Tai cocktail with the lilikoi foam was excellent! The table bread was also very good, nice and warm, delivered with butter and crystallized salt.
We started with the special tomato salad appetizer, which was very good but certainly not as good as peak of Summer Indiana tomato-like. You could taste the freshness and good flavor. There could have been a little bit more blue cheese crumbles on top, they were very sparse.
Our waiter recommended the hillbilly cornbread so we had to try that! He said it’s made with canned creamed corn and it was very very moist and did not disappoint! Definitely on the sweet side but I prefer that. Nicely grilled and delivered to our table warm with butter.
Merriman’s Waimea delivered in every catagory.

We had Tako “Escargot”, Ceaser Salad, Pa’auilo Baby Spinach, Day Boat Catch of The Day (Mahi Mahi) and Roasted Chateaubriand.
Every dish was prepared to perfection and our superior service was provided by Emiko.

First, the atmosphere strikes a perfect balance — polished yet warm, with a sense of aloha woven in. The space feels elegant but not stuffy, and you sense the care put into the details. The staff greeted us with genuine smiles and guided us confidently through the menu and wine list.
As for the food — outstanding. Every dish felt intentional and true to the spirit of Hawaii Regional Cuisine. The catch-of-the-day was cooked beautifully; the local beef and produce-driven sides were superb. We also made sure to try one of their signature cocktails (the Mai Tai with lilikoi foam) — it delivered.
Service was equally impressive. Our server anticipated our needs, explained dishes with enthusiasm. Little touches like that elevated the whole evening.
Yes, the pricing is upscale — but you absolutely get what you pay for. The ingredient quality, presentation, ambiance, and care make it worth it. Merriman’s Waimea is more than a meal — it’s a culinary experience that honors local flavors and talent. We’d return in a heartbeat on our next visit to the island.

We ordered the Poke and beet salads for appetizers – both were incredible.
For entrees, I had the lamb and my husband got the NY strip. Both were seasoned and cooked to perfection. Also, portions were very generous!
For dessert, we ordered the bread pudding which was so yummy and not too sweet.
Overall, a perfect dinner to end our vacation in Hawai’i
