What a fun place! Bright and colorful, even the restrooms! My chai was DELICIOUS. The service was friendly. The assorted flavors of cheese curds were tempting. These included green chili and also dill pickles. Maybe next time I’ll try some as I know I’ll be back.

This location has the most inconsistencies with their drinks as compared to the other ones. I could order one thing one day and it’s perfect, tastes like it normally does, and the next day it’s off, like they didn’t add in something correctly or didn’t wash something they should have. The people are usually really nice and helpful but there have been a handful of times they just clearly dont want to be there (saw a job listing a while ago and these people are severely underpaid so I don’t really blame them tbh). I do wish the lobby was bigger because it fills up really quickly and I feel bad if I take up a whole table trying to work on something so I dont stay anymore. Management really needs to do better with this one.

Arthur, Abby, and Michelle are the best baristas around. Not only do they have a pleasant and friendly demeanor, but their delivery in their service is top notch. This location is truly one of the best in town. The only thing that is disappointing is the hours of operation for this location. I was hoping to see solar roast be available for finals week as this would have been a nice break and unfortunately they are closed. It seems like this location closes often for peak times which makes it hard on us. I hope they reconsider opening for key times in the future.

Yalls quality has seriously tanked in the last few months. I just got a large latte from yall and the cup is only half filled. I haven’t even taken a sip yet. We used to love going there for the eye openers and the baked goods, now the baked goods are bought from somewhere else, and the eye opener bagels are rock hard and inedible. Really sad cus yall used to be my go-to place. This half empty coffee might have been the last straw tbh.

3rd time trying to support local. 13 minute wait for burnt coffee that was sloppily overfilled and spilt all over upon picking it up. Wife ordered sugar free latte that was cold and pretty sure not sugar free. Sorry, I just pay premium prices for horrible coffee

The food and coffee here are very good, and the staff members are always friendly and helpful. It can take a long time to order and receive your items during peak times, but I guess that can be expected at a local business with great offerings.

Visited the newest location and it is really nice!! They didn’t have the green chili for the green chili white mocha so I got my usual Pueblo mocha. It wasn’t as good as the one at the original Solar Roast. And I had to add a whole bunch of sugar to make it drinkable for me. The cayenne was great as always. My friend got the lavender mocha which was kinda strongly sweet in the beginning. Turns out she just had to mix it well. After that, it was delicious. And I say this even though I don’t like lavender in my drinks.

We also got the chicken pesto and the ham and cheese croissants. The chicken pesto was YUM. Lots of pesto, which is the trick. Heavy so I took half home. The ham and cheese wasn’t anything special as per my friend.

The ambience is bright and the walls have a cool abstract pattern. All in all, we really liked this and will come again next time we are in Pueblo West.

I ordered a latte and was about 2/3 of the way through when I got a mouthful of chunks, I don’t think it was curdled milk because the taste wasn’t sour and these chunks were pretty hard to the touch. I reached out through their business fb page asking what this could be and they did not respond. Their coffee is always pretty mediocre but this was too much and will be my last time getting anything from them
