Last night I had the pleasure of dining at Santo Coyote, and it was nothing short of amazing. From the moment I walked in, I was captivated by the beautiful decorations — the atmosphere was warm, lively, and full of character, perfectly balancing traditional charm with a modern touch.
To start, I ordered the guacamole with chicharrón and queso as appetizers. Both dishes were absolutely delicious — the guacamole was fresh and full of flavor, and the crunchy chicharrón added the perfect texture. The queso was rich and comforting, a perfect way to begin the meal.
For my main course, I had the Mar y Tierra churrasco with shrimp, and it was simply outstanding. The steak was tender and perfectly cooked, complemented beautifully by the juicy, flavorful shrimp. Every bite felt like a celebration of flavor and quality ingredients.

We had a 12 hour layover in Guadalajara and we spent 2 of those hours in this magical place. The food was abundant, the service was so thoughtful and kind. The atmosphere was like a dream. I would love to come back here if I get the chance.

There were a massive amount of real flowers decorating the entire restaurant and wandering cobblestone paths that lead you through natural greenery to your table where you will experience top notch service and mind blowing delicious food. Accompanied by live entertainment by mariachi and mexican dancers. Be careful not to order too much. The servings are large.

I am not a big fan of buffets but this place was exceptional! The whole staff were great, they were quick to refill our drinks and pick up our plates. Everything that I ate was very good. I especially loved the birria tacos, the salsas were amazing. The whole vibe was awesome too. Upstairs they have a tequila museum and store to buy or sample some drinks. The cooks at that food stations were phenomenal as well
It is very difficult to find places that have great service, atmosphere, and great food but this is definitely one of those places! Can’t wait to visit again
