If happiness had a flavor, it would be these chilaquiles. The crunch of the chips survived the salsa like a champ, protein perfectly cooked, and the whole plate basically gave me a hug from the inside. Honestly, I don’t know what kind of sorcery is going on in that food truck, but I’m here for it.
Warning: you may start questioning why you ever ate breakfast anywhere else. 10/10 would happily chase this truck down the street again.

I ordered the Chilaquiles with carne asada. The carne asada had some chewy pieces, which I prefer to be clean. The salsas were also watery and could have been thicker in consistency. Overall, I would rate this dish 4 stars.

Absolutely delicious food!!! I was not expecting this to be one of the best Mexican food I’ve ever had, and I’ve been to Mexico and live in LA. The steak taco can change livesss and the fried quesadilla was so good too. Would come back to Boulder just for these again!! Service was great too. Only thing that could be better were the cocktails as they were not very well balanced.

Flavorful, fresh whole ingredients, tasted like I was eating them right out of the kitchen at home. Prepared on the spot, with kind and prompt service; we hung out and chatted with them while we ate. Al pastor tacos incredible. Chilaquiles bowl and burrito are both loaded! Breakfast burrito was perfect for an on the go, filling meal. They offer a great cheap deal to add protein/another meat to any menu item!!

These are by far the best tacos I found in Boulder and compete for top five in Denver. These guys are legit authentic and priced reasonably. Something hard to find these days. And for the owner yo estaba en Xalapa en 1999 y 2000. Trabajaba en la UV. Me imagino que tenemos amigos en común.

I would upload a picture of my food but I ate it immediately because of how delicious it was!! I got the chicken tacos and they were super juicy and flavorful. The tacos include 4 tacos and it is a perfect portion of food. The prices are super reasonable and the location is perfect. I would highly recommend stopping by for lunch or even dinner!

THIS PLACE IS SO GOOD. Portions are SO GOOD. They do not miss. Ordered 2x al pastor, 2x asada. Salsas are great, everything reminded me of the tacos in California.
