We’ve grown gongura for years here in Missouri and made the pickle for ourselves, with the recipe and the assistance of our friends from Hyderabad. One standout dish was the Gongura chutney, made with the native leafy green from the southern Indian state of Andhra Pradesh. The chutney served at Gongura was nothing short of amazing. The chef expertly captured the essence of Gongura, transporting me to a moment akin to the famous scene in Ratatouille, where Anton Ego takes a bite and is instantly transported back in time.
What made the entire dining experience even more remarkable was the fact that I was savoring authentic South Indian cuisine in a small Missouri town, prepared by an American chef. The chef’s dedication and skill in recreating these flavors so authentically deserve applause.
