We had such a great experience at Pueblo Viejo! The food was absolutely amazing we ordered the sampler and the molcajete, and both were packed with flavor and cooked to perfection. Every bite was delicious and you could really taste the quality and authenticity in each dish.

The ambience was just as impressive warm, inviting, and full of character. It made for a great dining atmosphere, whether you’re there with friends, family, or on a casual night out. The environment was friendly and comfortable, and the staff was attentive and welcoming.

Highly recommend if you’re looking for incredible Mexican food in a great setting.

How is this Mexican food so good?! Maybe I was just really hungry, but I just had 1. the best spinach enchilada and 2. the best crunchy beef taco of my life. The rice was fluffy too . Being a Colorado Springs local, I’m pretty sure I’ve naturally eaten at most Mexican restaurants in the Spring and Pueblo. The food here was incredible! Our waiter was kind and attentive, and the restaurant was clean. Color me impressed.

If you’re looking for authentic this isn’t it. The salsa is watery like tomato juice with no flavor, the tortillas aren’t homemade but can be very dry. I used to like this chain but TO ME its gone down hill. I ordered beef taquitos & carne aside tacos, wasn’t happy with the lack of flavor.

We had an absolutely fantastic dining experience that I just have to share! From the moment we walked in, the service was top-notch. The staff was attentive, friendly, and made us feel right at home. It’s always a great sign when you feel welcomed like that.

Now, let’s talk about the food! The kids couldn’t get enough of the quesadillas – they were a huge hit. Perfectly cheesy and packed with flavor, they left our little ones smiling from ear to ear. As for us adults, we thoroughly enjoyed the molcajete. It was a delightful combination of succulent meats and fresh ingredients, all served in a traditional stone bowl that added a special touch to the meal.

And I must mention the sampler we ordered! It was an absolute must and a perfect way to try a little bit of everything. Each bite was more delicious than the last, and it truly enhanced our dining experience.

We’re already looking forward to our next visit to Denver, and you can bet that this restaurant will be at the top of our list. We can’t wait to return and enjoy more of their amazing food and exceptional service!

First time into this Pueblo Viejo. Ordered a lunch special, tamale and enchilada, my husband ordered a chili relenos and enchilada. Both were very delicious and a perfect amount of food. Rice was tasty and the chips had a great crunch to them.

Service was great and the ambiance was relaxing and inviting. Really can’t think of anything negative with this experience.

I highly recommend this Pueblo Viejo Mexican Restaurant.

I didn’t get any photos, but the plate of food is massive! I thoroughly completely enjoyed my chips bean dip and salsa to start. I ordered one of their fabulous margaritas, even got a little buzz. The chilirano was cooked perfectly and just a touch of spiciness. The carne asada is what my friend had and it was cooked perfectly in the tortillas were warm and pliable. Service was outstanding I wish I remembered his name I think it was Ruben. He was knowledgeable yet comical, and was always ready to refill our water or or check on us.

A solid experience all around. The main thing of note was the service! Our waitress was super kind and was always checking on us to make sure we had enough chips and water, and to make sure our food was good when it came out.

The food itself was good, but not quite as good as some other Mexican restaurants I’ve been to in the Springs. I went with my mother, and her meal was delicious (which is why the food gets 4 stars instead of 3). She got the taco salad with chicken. The chicken was moist and flavorful with a ton of sauce, which I love. The sauce was a bit sweeter than other sauces I’ve had on chicken fajitas in the past, but still great. Overall, a fantastic entrée. I got the combo with a tamale, taco, and enchilada, all with pork. The taco was outstanding, the pork was moist which is hard for some restaurants to pull off. It was seasoned well and came in big chunks, which created a great texture. However, the tortillas for the enchilada had a very pasty, almost raw texture. On top of that, the tamale was extremely dry, and the pork used in it tasted very different from the other pork that I loved. It didn’t have nearly as much flavor as the taco or the enchilada. The rice was dry and lacking flavor as well, but the beans were OK.

All in all, it was a good experience and I definitely did not feel like I wasted my money or anything, but there are better Mexican experiences (from a purely taste and flavor perspective) to be had in the Springs in my opinion.

We ate here yesterday and first of all the service was amazing, the staff was so friendly and was on top of everything. The food was where things were a little odd. The chips and salsa were great. They served a bean dip along side it that was to die for. We ordered the steak fajitas and everything was normal except for whatever the heck they seasoned the fajitas with. It was like an Asian teriyaki sauce all over my steak mix. I have eaten at countless Mexican restaurants mostly in the south so maybe this is just not a norm down there but I could not eat it mixed with guacamole and everything else, the flavors did not mix! Other than, everything was amazing!

Well if you want incredibly mid Mexican food here’s the place. We got here before 6, and waited about 10 mins before anyone even spoke to us about being seated. When we were sat, we didn’t see a server for about another 10, and he looked surprised to see us there, seems like a communication issue on their end. We then waited another while before we ever even received water, at which point we decided that the next time we saw our waiter we’d go ahead and order our entrees and appetizers just to hurry things along. However, we waited nearly an hour to receive our veggie fajitas for two. Our waiter was incredibly absent as well, we had to ask near by servers for straws and water refills. The table across from us ordered way after us and received their food just after we did. While they had a larger group of 4, and we were just two people. I initially thought this could be due to the type of food ordered, but they got fajitas as well. The food was just alright to top everything off. Beans are 100% canned and rice was very unflavorful. I will say the veggie fajitas themselves were pretty good, but it’s hard to mess up grilled veggies. We also only got 4 tortillas with our fajitas for two. We got charged for the extra 3 tortillas we received which got thrown on the table by the waiter. We also initially had asked for both corn and flour tortillas but only received flour, our server was no where to be found to fix this mistake.

Overall, this was not a great experience. I don’t recommend coming here unless you have a lot of time to waste and some extra money you want to throw away.

First and only time here. Waited at entrance but not long. Wasn’t greeted but did have smiles. Consistent on checking on you. Was quick, hot, and fresh. When paying the guy kept the change and only gave my bills back without consulting with me first. Overall I was satisfied.
