William B’s – The Great Steakhouse That Could’ve Been

As we entered William B’s Steakhouse last night it felt like it had potential. The setting suggests classic steakhouse charm. The menu promises prime cuts and comfort favorites. Unfortunately, what we experienced was less “great steakhouse” and more “missed opportunity.”

Let me start by saying the waitress did the best she could — but she was clearly overtaxed. She was juggling bar duties, making drinks, and serving our table of eight at the same time. That’s not a knock on her effort; it’s a reflection on management. No server can provide attentive, quality service when they’re running between the bar and a large party all night. It showed in delayed drinks, long gaps between check-ins, and an overall feeling that the staff was stretched far too thin.

The food was even more disappointing.

The prime rib — which should be the star of any steakhouse — was mediocre at best. It lacked the rich, juicy tenderness you expect. Instead, it came across as uninspired and forgettable.

The French onion soup was perhaps the most underwhelming dish of the evening. It was essentially flavorless. No deep beef broth character, no bold onion sweetness — just a bland bowl that felt like an afterthought.

But the biggest issue of the night? Execution on the steaks. Out of eight dinners, three filet mignons had to be sent back because they were overcooked. At a steakhouse, cooking a filet properly isn’t a bonus — it’s the bare minimum. Sending nearly half of the steaks back for being overdone is unacceptable. When they finally returned, the timing of the table was thrown off and the experience never recovered.

A steakhouse lives and dies by two things: properly cooked steaks and attentive service. On this night, William B’s delivered neither.

It could have been a great steakhouse. The foundation is there. But until the kitchen can consistently execute and the staff is properly supported, it remains what it felt like that evening — the great steakhouse that could’ve been.

Bartender was great! But busy doing other things
Whole place was eerily quiet.
Portions were large but food quality was very lacking.
Steak ordered medium was served rare, twice.
Lobster mac&cheese was bland and dry. Mushrooms and onions to top steak were uncooked and very over priced.
Broccoli was mushy and bland.
Some soft music and a little seasoning would go a very long way here.
Overall $100 meal worth $35 on the generous side.

Atmosphere was a little outdated. Service was good for being Valentine’s Day weekend. The food was okay but not to par, i ordered 76.00 surf and turf came with no side.. never been to a restaurant that a surf and turf at 76.00 doesn’t come with at least a salad or something. The lobster tail was very small and dried up. I ordered a filet and lobster the fillet was 6 oz the lobster tail half the size of the fillet. My wife ordered a filet her came with a side which was a baked potato she chose. But also a chunk of broccoli that was never cooked not really sure what that was about. Left there hungry the both of us did.

My wife and I have gone here a dozen times. Last night was the worst. Walked in with no reservation. Only a quarter of the tables were being used. The receptionist said we would have to come back 45 minutes later. We did and were seated. 10 went by with no one attending our table. I asked another server for help. Then a waitress came out and went to talk to the receptionist before coming to our table. She apologized up and down about the delay. We ordered both our appetizers and entrees. Appetizers came out then 20 minutes later my wife’s salad came out. And here’s the disappointing part; 45 minutes later our steaks came out. They were cooked right but they were cold. So we asked for to go containers and left. The waitress continued to apologize up and down stating it was the new cook they had working. I don’t believe that as our steaks were cold as if they were sitting in the back for quite awhile. I do not know if we will ever come back. It was a very disappointing and frustrating experience.

Side note: How can they call themselves a steak house when they do not serve a T-Bone steak?

We we went here for dinner instead of Johnny’s Italian steakhouse.
I was not disappointed. The steaks were excellent. My husband had the New York strip steak, and I had the ribeye smothered in a decadent sauce and covered with cheese.
The veggies were a little too al dente but OK.
The atmosphere was subtle, lighting, and romantic.
Our waitress was attentive, professional, and quick.
the price was reasonable and I would highly recommend this restaurant

First of all, the wait staff was wonderful! From the Hostess that sat us to our server. Attentive, without being bothersome, knowledgeable, friendly, just perfect!

My steak was cooked perfectly. But it was tough and absolutely flavorless. I prefer to have no sauces and not overbearing seasoning. I like to taste the steak. But this was tough, chewy and tasted like what I assume boiled steak would. Zero flavor. I ordered the baked potato and it was GIGANTIC. It seemed like it had been cooked hours before and was not piping hot like I am used to. Plenty of butter and sour cream though. It was good. Broccoli was good.

My wife got the filet. She said it was “fine”. She also got the Brussels sprouts and cauliflower. She found them “good”.

I expected a lot more from this “steakhouse”.

What an experience! It’s been years since we had a steak that good! Excellent cut, well cooked and seasoned! Sides were huge portions and delicious. And the service was phenomenal! Friendly, personable and genuine. A five star experience without being snobby A fantastic experience that leaves me sad it’s so far from home!!

Excellent improvement from the opening. We had tried them when they first opened and was disappointed. Won a coupon and was very impressed with the improvement. My wife started with the French Onion soup and it was only lukewarm. Server replaced it immediately and it was very good. She had the Fra Diavolo which was a ton of food and very good flavor. Really glad we held back and only had one order of the pretzel bread. BBQ ribs were solid. A bit on the over-sauced and too falling off the bone for my tastes, but can see why folks love them. Thankfully, the carrot cake was still amazing – we had to take most of that home with us!

We were pleasantly surprised with how good our meal was here. Our ribeyes had great flavor & cooked as ordered. Out sides & cocktails were perfect as well. We will definitely eat here again.

Nikki was our server and did a wonderful job of taking care of our table. We had nine people and many questions. The food was way above average. I have to ride a scooter and they accommodated me perfectly.
