Brewery & restaurant quickie.

Kettlehead Brewing featuring Za Dude Pizza Co. in Tilton, NH for a few pints, some buffalo tendies & a mother of burger. I grabbed the GIRL AT THE ROCK SHOW V.3 IPA which was excellent. It could be my favorite iteration yet & a collaboration with the awesome beer bar Defiant Records & Craft Beer in downtown Laconia, NH that’s well worth checking out.

As a app I ordered the “Buff Bagwell’s Sugar Baby”, which were brown sugar buffalo covered tenders. They were hot for sure, but damn good. I ordered the option for three, but there is one for six. I figured with my second beer & the travesty of a burger I was about to order, three tenders were good. ‍♂️

I don’t know what came over me this day, but I turned it up with this burger I ordered. Looking at the menu I grabbed the “Henhouse Hustler” fried chicken sandwich with cool ranch seasoning, bacon & calabrian ranch on a brioche bun. I then added two smash patties to it & created something straight out of a science fiction film. This was a phenomenal burger & actually held up on the bun really well with the top to bottom bun ratio staying pretty much the same. This burger isn’t on the menu, but it’s officially been named “Meatwad’s Tinder Profile” from Za Dude’s. ☘

I then grabbed my third pint of the GIRL AT THE ROCK SHOW IPA while I sat at the bar & recovered from everything I had just put in my body. This was a really fun trip, but burgers like this aren’t something I can do on a weekly basis if I want to make it to 42, but I’ll step it up again sooner than later. ☘

BURGERGASM RATING – 89/100 ☘ ✌♥️

Za Dude Pizza Company – 97 Main St, Nashua, NH.

Za Dude Pizza Company is collocated with Kettlehead Brewing Company in downtown Nashua, NH on Main St. I’d seen some great pictures of their pizza and my friend recommended them so we checked them out today.

My buddy and I ordered 2 of their specialty hot dogs (aka glizzys) that came with fries and got some beers to start. One was a crab Rangoon glizzy and the other was a Mexican street corn glizzy. The hot dogs were top notch all beef hot dogs grilled perfectly. The toppings were delicious, well thought out, and the buns (New England style) were griddled to crispy perfection on both sides. The fries they came with were seasoned perfectly and fried to perfection. Some of the best hot dogs I’ve had anywhere, including in Chicago. But while I will grab some glizzys next time I go, I came here for the pizza. So here we go.

Pizza is my favorite food and I’ve frequently driven as far as NYC or flown to Chicago to try certain pizzas that are stand out top notch pizzas. We ordered 2 pizzas: first was the Delivery To 122 & 1/8 which is a pizza made with their house made zamato sauce, east coast Grande cheese blend (the best cheese for any pizza hands down; any shop that uses Grande cares about the quality of their pizza), cupping pepperoni, brown sugar chili crisp (made in house), house hot honey and basil. First off, the menu is very detailed and the descriptions of every pizza on the menu made me want to try them all but a pepperoni pizza is a baseline for me that I always try first. This is easily my new favorite pepperoni pizza in NH/New England and I don’t say that lightly without regard to the many other phenomenal pepperoni pizzas in NH (see: Venice or Vintage in Manchester, Granfanally’s in Salem for other great pepperoni pizza). The crust is thin, cooked perfectly (without needing to order it well done as I do almost everywhere else), delicious, crispy, and zero flop despite the abundant quantity of high quality toppings. They’ve perfected their crust recipe and it shows; thin, cooked perfectly and with just the right amount of char, golden all around, and crispy with the perfect chew and flavor. The cupping pepperoni they use here is top notch and high quality; it’s flavorful, cups perfectly and is not greasy or overpowering. This is some of the best roni I’ve had on any pizza anywhere and they source it out of a place in Ohio according to the owner. They distribute their toppings perfectly and with care which is extremely important when making a perfect pizza. The chili crisp added a sweet, savory and spicy (but nothing that burns your moth) flavor that is unmatched. Hot honey on a pepperoni pizza is a match made in heaven and their house hot honey was delicious. The basil was super fresh, distributed perfectly and added an herbaceous freshness that added a balance to this pizza perfectly. The sauce was balanced, delicious and they use the perfect amount. The topping ratios were perfect. This pizza was well thought out, prepared, and executed perfectly. It’s a 10/10 and is the best pepperoni pizza I’ve had in NH easily.

The second pizza we got was the Morty Mcfly’s Time Capsule which is a pizza with a garlic confit cream base, east coast Grande cheese blend, Mortadella, Pistachio Dust, Herbed Whipped Ricotta and house hot honey. This pizza was an absolute flavor bomb. The cook was perfect with no request for the pizza to be well done; consistent with the roni pizza we ordered. The attention to detail and quality of the ingredients was amazing. Zero flop. Thin crust that was crispy and crunchy to the last bite. The toppings were delicious; salty, savory, sweet and with a mild kick from the house made hot honey. The herbed whipped ricotta was a perfect addition to this pizza.

Za Dude is collocated with Kettlehead Brewery in Dowtown Nashua. My buddy and I tried a selection of their draught beers and they were all delicious. They have around 50 beers on draught and all of them were great. The bartender was awesome, too.

Check out Za Dude. You won’t be disappointed.

I just had the Buffalo Chicken pizza and it was incredible. By far the best Buffalo Chicken pizza I’ve ever had. The flavor balance of all the ingredients was spot on and the texture of the crust had a delicious crispy bottom with a chewy inside. 10/10 would get this pizza again.

Where to start
I guess with the appetizers!!!
With a unique and inspired twist on some classic appetizers, such as the meatballs or Rangoon mozzarella sticks the Za Dude apps where a breath of fresh air in a usually boring world up here in NH
The burgers….my wife has not stopped talking about that dang Ash Ketchum burger since the pop up days…..yall aren’t allowed to impress my wife more than I can….
We recently tried one with grilled pineapple on it(sorry not good with names) it was absolutely delicious probably hard to beat out as my favorite

The wings!!!!!!!!!! Get your self in on some of that brown sugar buffalo
the sweet the spicy now that I’m thinking about it again I’m probably gonna have to have it for lunch today.

I’m running out of space so I am not gonna be able to review all of the great food that I had there

I wanna do a quick shout on the pizza
If you hate Greek pizza like I do
If you are sick of the standard, no one gives a damn pepperoni
If you want to try something new and exciting get yourself down there to try any one of those pizzas
In the words of a wise man”they make pepperoni worth eating again”
I am very fond of the crust, nice and crisp the way it should be the ingredients while sometimes can be new and intimidating are far from that on the pallet and every single one is a new journey

I’d give it 1000 stars if I could

This is the best pizza in New Hampshire…flat out…no contest. Not just the best in Nashua or the Merrimack area…the entire state. I am an open and proud pizza snob that spent most of my adult life in New Haven, CT which is the pizza capital of the world. Since meeting my wife and buying a home in Nashua about 6 years ago I’ve been searching high and low for a pie that atleast comes close to New Haven. We had tried every spot in the more suburban south eastern triangle of New Hampshire(Nashua up to concord, over to the seacoast), and the only thing New Hampshire has going for it is beach pizza(Tripolis in Hampton) which is actually more of a mass thing.

We have given up on New Hampshire with the recent launch of famous New Haven spots Frank Pepe’s and Sally’s pizza down in Burlington/Woburn respectively. We resigned ourselves to the fact we would have to make the 30-35 min drive down RT 3 if we wanted real pie.

We’ve walked past kettle head a million times over the last few years and tonight we noticed what looked like a new food vendor inside the brewery. We’ve looked before and their menus seemed more like basic bar food snacks and sandwiches. We were pretty sure the pizza shop inside was new vs the last time we checked(which could have been as long as 2-3 years ago). So despite my better judgment we figured we’d try the pizza expecting the disappointment we’re accustomed to in New Hampshire. Boy am I glad we made that stop.

Without glazing them too hard, I can honestly say they could throw up a shop on Wooster St. in New Haven and call themselves “apizza” and they would do very well. I’m not going to be blasphemous and say they are as good or better than Sally’s or Franks but they are in that ball park.

If you’re in the area and want real pizza, this is your only choice, and well worth it. I had a brief conversation with one of the two owners and they seem to be a newer business(under two years old). Go give these guys your support. If they can get their own spot, a coal or wood fired oven(currently using what I believe is a high temp convection oven with brick surface) they will become a sensation in the area. They are already producing world class pizza working out of a small corner of a brewery by using high quality and correct ingredients as well as understanding how a pie is meant to be cooked(char is flavor, it’s not burnt).

Kettleheads beer is solid, no complaints there, but the real star of the show in that building is the pizza no one’s talking about.
