My husband and I had the street tacos and seafood linguine for the first time. We would highly recommend and go would there again. Shout out to Blake our server, he was great. Dim lighting was nice. It can be a little pricey. Btw, the water is filtered three times.

Located inside the hotel, it’s not a standalone restaurant. Service was great, seating was comfortable and he explained things on the menu we didn’t understand as a first time guest.

The pork chops are AMAZING! They deserve five stars on their own. We went around 4pm and there was no big crowd which we preferred.

Restraint Be Damned — That Chocolate Cake Changed Everything.

Brazos Bar & Bistro | Review

I walked in expecting elegance—expecting restraint. I imagined small plates, refined flavors, and a slow dance of taste that knew exactly when to whisper and when to roar. For a moment, I thought I was right. The space? Slick. Airy. Like it knew what it was doing.

Then came the avalanche.

Let me take you through it.



Cocktail – Cowboy Manhattan

A measured pour served in a chilled martini glass, punctuated by a mysterious black cherry (or was it an olive?). Not bad, but not memorable. The drink didn’t carry the weight of its name—it leaned more polite than rugged. But it got the job done. 3/5



Starter – Stuffed Avocado

This was the sleeper hit. Creamy Hass avocado, warm adobo chicken, cool pico, queso fresco—it was balanced. Flavorful. A textural masterpiece. The only mistake? It was built like an entrée. If I’d finished it, I wouldn’t have had room for the rest. As an appetizer, it was too much of a good thing.
But still, 4.5/5 for flavor and surprise alone.



Kung Pao Brussels Sprouts

Overcooked, oversauced, overwhelmed. It looked like the sprouts had been roasted, forgotten, then hastily rescued with a bath of sticky, cloying sauce. It didn’t cling—it drowned. There was no charred snap, no fresh nuttiness from the peanuts. Just heat and heaviness. 1.5/5



Entrée – Bourbon Peach Chops

Two giant pork chops—two—slathered with a handful of peach slices. Not sauce. Peaches. It looked more like Sunday supper for a group of six than a thoughtful plated dish. The garlic parmesan potatoes were a mystery lump in the middle, mistaken at first glance for a third chop. Over-portioned to the point of parody. Zero elegance. 2/5



Redemption – The Chocolate Cake

And just when I was ready to walk out with a clean-cut 3-star, in came the miracle.

This cake didn’t ask for forgiveness.
It demanded silence.

A thick, moist brick of deep, dark chocolate, draped in glossy ganache, and topped with delicate shards—almost like cocoa glass. Every bite was rich but not cloying, bold but balanced. It didn’t just redeem the meal—it transcended it.

This cake didn’t save the day—it became the day.
5/5. Easily.



Final Verdict: 4 Stars (Raised by Chocolate Grace)

This place fumbled the promise of fine dining with oversized portions and careless presentation—but damn if that chocolate cake didn’t pull it from the fire. That and the avocado made the experience worth it—even if I had to dig through a mess to find the gold.

Come for the cake. Stay for the avocado. Bring a friend to split everything else.

Pizza. Wings. Beer. And salads lol local craft beer as well as regional and your typical domestics. Slices of pizza are pretty large, a whole pizza comes in 2 sizes and can feed 3 adults (14″)or 5 adults (20″).

Location is incredible. On the ride, a deck that overhangs the river….absolutely fabulous location you’re almost a fool to NOT come here!

I wanted to go and have a nice steak and a great time. For starters, it was a nice bar and restaurant, I did my research and it was listed as a top ten places to eat in Waco. I would have to disagree. If you want to go and have a nice drink for a high price, this would be right up your alley. The drinks were good, don’t get me wrong, but that would be the only good thing about this place.

We ordered the humus as a starter and it was pretty good. Their drink menu was pretty good, i will say that their blueberry mojito, strawberry summer and their margarita was top notch.

We then ordered the potato gnocchi and I was in the mood for a steak, DO NOT go for their steak, you will be disappointed. The staff was friendly but when you ask for a steak medium well and extra seasoning and it comes out looking like they heated it up in the microwave and forgot to season it, well you’re getting a horrible steak, not even worthy of being called a steak. No lie, take a look for yourself…

My family checked out Brazos Bar & Bistro for my Birthday.
The ambiance was nice. Staff was attentive and food came out in a timely manner.
For our starters we went with Green Chile Queso and Shishito Peppers. Both are great.
My Barren of Mules was enjoyable and refreshing. My husband when with a stout from Barrow Brewing Co.
As for our food both the Thunderbird sandwich and the J.R Ewing Burger tasted average. My husband was not asked how he would like his beef patty cooked so it was well-done.
The flatbread was okay, nothing special about it.
My Chicken Montelongo was very good. I would recommend it.
And the Pork Belly Tacos was not appetizing at all. Everyone that tried it could not eat it. Thank goodness it came with a good amount of sides.
Overall the ambiance itself is nice, staff is professional, and drinks are good. As for the food it is quite expensive with flavor comparative to any cheep of fast food restaurant.
If you are staying at the hotel it may be a good option. But we will not be going out of our way to visit any time soon.

I took my wife and son out for her birthday. We ate outside as the weather was pleasant. Some of the patio furniture is a little lungey for eating but great for sitting back and relaxing with a drink. The only improvement would be to do something with the blank wall in the back, maybe a mural. The drink selections was nice, my wife loved the Steel Rita and the server poured my beer perfectly. The only thing missing is a selection of draft beer. We ordered food, and was warned that the double cut pork chop would take a while (it is about 2 inches thick). I had Pan seared tuna that was cooked perfectly. The chicken nachos for my son were good too. The cream Brule` was not as good as expected, the top did not have that distinctive cracking sound. From the looks of the bar they do have some nice high end liquor but I did not inquire. The bathrooms were very clan and I loved the salt hand wash. While the food is a little bit pricy, I think it is worth it. I will be eating here again.
