Hummus republic is my go-to for lunch when I’m in the area. I love to get a bowl with couscous, chickpeas, and mushroom shawarma. The mushroom shawarma is soooo good I almost need to start ordering double protein because it’s so delicious. I love that you can add plenty of toppings and sauces, and hummus! I’ve noticed their portion sizes have decreased recently, but it’s still plenty of food. Picture below is from a few months ago and since then I’ve never quite got that same amount, but maybe I just got lucky before. Either way, I’m still coming back. Pop around the corner from the republic to try Story Coffee Bellevue for a nice drink as well 🙂

I was excited to try this make-your-own style Mediterranean restaurant. I probably had high expectations and this place didn’t meet them. We ordered two bowls, the falafel was fresh and tasted satisfactory but the chicken shawarma didn’t taste good and felt rubbery. The hummus and dressing offerings made the bowl taste a bit better. We also ordered their pita chips that were made fresh but they were thick, very oily, and lacked taste.

We were looking for CAVA and saw this listed as one of the Mediterranean restaurants in the area. Decided to give it a try and it was a pleasant surprise!
There was no one in this small place around 3pm on a Tuesday and we had the entire place to ourselves. Just like CAVA, you chose your base (couscous, chickpeas, green veggies), protein (shawarma chicken, lemon chicken, gyro, beef), and all sorts of toppings and sauces. We ordered two bowls with completely different combos and they turn out both delicious.
Give their date and tahini smoothie a try! It had a creamy sesame taste but not too strong or sweet.

My team had a meeting catered by hummus republic today. I really enjoyed it. There was a few different types of hummus to choose from, plus a half dozen different sauces to add on top. We had falafel, chicken, and beef. The falafel was my favorite. The salad had a lot of olives on it, which i really appreciated. The crispy pita crackers were delicious.

I hate to write a review like this. I ordered a build your own bowl and I would not recommend ordering from here via a food delivery app. I used DoorDash. I am extremely disappointed in the meal I just received. Half the items I requested was not included in my bowl. I tried to call the restaurant but of course no one picked up. When I was looking over my receipt there was no couscous, hummus, most vegetables and herbs, tabbouleh, chickpea croutons. It’s insane how much was missing. What I did receive tastes good and I would’ve loved to be a repeat customer but due to this experience I will not returning or recommending this establishment to others. I’m extremely disappointed in the lack of care to customer orders. Please don’t spend your hard earned money here unless you’re ordering in person.

I was so excited when I saw this place open up – it has a similar setup to the Cava and Mezeh chains on the east coast. They’ve only just opened up though and that’s evident in the staff training and food quality. The staff is super sweet and helpful though and I’m happy to give it another shot after they’ve been open for more time.
For food, I tried a bowl with the chicken shawarma which was ok. I’m usually a big sauce person but they give such large portions of the dips that the whole bowl turned extremely wet after mixing which gave it a super unpleasant texture. The flavors were good separately though, so once they lock down proportions it’ll hopefully be better. I did try the tumeric lemonade as well which was awesome and very refreshing!
Limited parking in this area. I think there are a few paid parking garages nearby.
