Amazing service and incredible food! The seabass was the best I’ve ever had — perfectly cooked and full of flavor. The mango dessert was light, refreshing, and delicious. And the octopus? Absolutely outstanding — tender and flavorful. Highly recommend for a special evening in Aspen!

Service by Benjamin was top-notch and the Elk Creole dish was absolutely delicious as was their bread.
But the Seared Chilean Seabass left a lot to be desired— the sickly brown sauce was so salty it killed the dish and tasted like it came from a bottle — it needed a lighter more elegant composition.

Betula used to be one of my favorite dinner spots in Aspen, but over the past two years it has declined significantly.

Food consistency is a major issue. You can order the exact same dish on different visits and have completely different outcomes. Sometimes it is good, other times it is poorly executed, which shows a lack of quality control in the kitchen.

The bar program has fallen apart. This used to be one of my favorite places in Aspen for an Old Fashioned, which makes the decline even more noticeable. Drink execution is now terrible across the board. Cocktails are sloppy, unbalanced, and careless, which is especially disappointing given how strong the bar used to be.

The beverage program overall is the most troubling part. The wine list is full of typos and misleading descriptions that cause guests to believe they are ordering a higher end or different wine than what they actually receive. People are ordering bottles thinking they are something else entirely, which feels deceptive.

The liquor list has different prices than what is actually charged, and those prices are not honored even after pointing out the mistake. This lack of accuracy and accountability further undermines trust.

Betula was once a reliable, enjoyable place. Between inconsistent food, terrible drinks, and misleading beverage menus, it is no longer somewhere I can recommend.

I just love the atmosphere both outside and inside at Betula. The bar is such fun, and usually filled with a nice mix of locals and visiting guests. But it was the food that keeps me wanting to go back. If only it were more affordable! Tip: share your meals, it’s the only way to go out in Aspen these days.

Every dish was an intentional work of art. They clearly care about details in the kitchen. The menu was well organized and thoughtful. I watched the staff stress on perfection, and although I wouldn’t say the experience was perfect, the effort filled the gaps. Quality is possible from the top down, and whoever is running this place expects a lot from their staff, and it shows. Absorbing this matters. This restaurant has character which matters as well.

Step into Betula and you’ll instantly recognize it as more than just a restaurant—it’s an experience in fine dining. The ambiance is a blend of sophistication and charm, with different zones to cater to every mood. Personally, I was enamored by the house music gently playing in the background, adding an extra layer of ambiance.

We were lucky enough to be ushered into a quiet corner by the fireplace, which lent a cozy intimacy to our dining experience, contrasting with the buzz of the main room. Service was flawless, attentive yet unobtrusive.

As for the food, every dish was a symphony of flavors. The ceviche Bonito was a testament to balance, each bite bursting with freshness. The pan-seared foie gras melted on the tongue, a delicate touch that was simply divine.

Now, let’s talk about the Chilean sea bass. Yes, the price tag may be astronomical (it is IMHO, $78), but it’s worth every penny. It was hands down the tastiest fish I’ve savored in a while, leaving me longing for more even as I finished the last bite.

And then there were the braised bison short ribs and gratin dauphinois—a match made in culinary heaven. The ribs were tender and flavorful, while the gratin dauphinois was the epitome of comfort food done right.

While the wine list is extensive, be prepared for the hefty price tag that accompanies each bottle.

One word of advice: make a reservation. Trust me, it’s better than facing a long wait time and risking missing out on this culinary delight.

I wish I had taken a picture of their desert. I have tried one of the best sorbets in my life. From the moment my husband and I stepped into the restaurant to last bite of our meal, everything was perfect. Wine selection could be less expensive . We will be back.

As soon as I stepped into the restaurant, I was amazed by the very elegant decor, the soft lighting, the long table in the main room, the bar, the cozy patio.
The service was excellent, the food was exquisite.
