I’m having a hard time understanding all of the below five star reviews on here. I’ve been to Mad taco multiple times as I live locally, and every single time I call the person on the other end of the phone is hilarious and efficient. The Mad Taco never misses. I love everything on their menu, and it’s some of the best food you can get in Middlebury which – in my opinion – is lacking consistently delicious dinner options. Sure, the prices are higher than your average taco spot, but so are the portions. I always have leftovers for lunch the next day. Ignore the low star reviews and order from here. It’s delicious!

Amazing Mexican food. I was visiting PhotoPlace Gallery in Middlebury, VT for the day. A friend suggested The Mad Taco. I was not disappointed at all. I ordered the Wet Burrito with smoked pork kimchi and a couple of VT Pilsner beers on draft. The burrito was huge.
Be ready to experience a multi-level orgasmic journey of tastes and flavors. I sat on the patio and enjoyed the river view and nice breeze. The inside is a very pub like vibe to hang out with friends.
They provide 10 different levels of hot sauce you put into little cups. I tried most of them. Each have a not only a level of hot – but brings to the food varied flavors which enhance the meal. I went in rows. I poured hot sauce 1 across the bottom, then #2, then #3, etc – also with out hot sauce the burrito was a mystical culinary of its own. I want to have a reason to go back and try their other entries.
The cost for my 1 beer and the wet burrito was $29.66. – This is not a “cheap” lunch – but this isn’t a Taco Bell experience either.
Two suggestions for ownership: 1) Toss in a handful of chips on the plate. 2) Provide a couple of Mexican based desserts (ie fried ice cream) Speaking with the cook they don’t have a deep fryer – they need to get one. Often times when eating Mexican food – people need to counter the hot with a sweet flavor. (I solve that problem by taking a walk to Otter Creek Bakery).
I understand Middlebury, VT has several great places to eat. I don’t know if I will ever get to try them out – because my next time back to Middlebury, VT – I am heading back to The Mad Taco.

I drove up here from Massachusetts because the wife and I had an anniversary get away booked. Was told this was a great sport for tacos… umm idk what to say… it’s not authentic and it’s incredibly expensive! 4 tacos for $39 with 18% tip. I’ve never seen anything like it. The taste was fairly bland as well. I guess everyone raves about it because there’s literally nothing up there in VT?

Incredible tacos! A bit pricy but the 2 tacos were very filling & fresh. Photos are of the Pork Belly, Pork Kimchi, Al Pastor & Carnitas.

Tacos are fantastic. So far smoked pork kimchi is my favorite. I didn’t think 2 tacos would be enough. I was wrong. These are overfilled doubled shelled tacos. Also really solid VT beer selection. Beers are Hill Farmstead, Edward.

I called at 6:00 on Tuesday, it took two tries before I got an answer, no biggie. I ordered two kids quesadillas, and I tried to order a meat that they didn’t have I said “Burnt Ends”, what I meant was “slow burn”, instead of here is what we have for meats the woman on the other end gave me an incredibly rude “that’s not a thing”. I tried to order two house margs, she scoffed at me and said “we’ll talk about that when you get here” and she hung up on me. When I got there the rude attitude continued. My drinks were made, but that is beside the point. For a 100$ order on a Tuesday I didn’t get the cream or side sauces that said came with it. This is not how you treat repeat customers , and not how you get people to come back.

This spot is tasty, friendly, and has fantastic outdoor seating facing Otter Creek. The kimchi and shrimp tacos are delicious, authentic, and fresh. The Pablo Paloma is the perfect tequila drink for a hot summer day. Highly recommended if you’re in Middlebury.

Pleasant random stop on a Sunday drive. I happened to stop in Middlebury VT and decided to stop in to see what the Mad Taco was about. After looking at the place and the menu I decided to give it a try. I’m very glad I did. The place is casual, fun and the staff friendly and welcoming. The prices are fair and the Cubano sandwich I got was enough for two. The sandwich was really quite spectacular. I feel a little guilty not trying a taco.

Really great food – 5 stars for that! But it was served on take away plates and with plastic cutlery even though we wanted to eat in and that took a lot from the experience. Hopefully they will change that soon cause the food deserves better!
