Just flew in from WI and made this the spot to stop as we had a 2 hour drive ahead of us. The menu intrigued me and it didn’t disappoint! This Power Bowl I split with my husband and it was filling but not heavy. Full of flavor! Love the details here (flowers!) We also shared a “Sneakily Healthy Brownie” which was delicious! Wonderful service. Highly recommend!

I and my family stopped by the food truck on the corner of E Lewis St and S B St and ordered their cold roast beef sandwich with arugula — and it did not disappoint. The sandwich was exceptionally fresh, well-balanced, and full of flavor. The beef was tender, the arugula added just the right touch of bite, and everything came together in just the right proportions.
I found out while dining that they change their menu every week, which is actually a nice touch. It keeps things interesting and gives you a reason to come back and try something new.

I would walk 100 miles uphill, backwards to get one bite of her Dixon melon and corn salad. It’s easily my favorite dish and I’m no stranger to fine dining. Sadly, this dish is only available for a week every year. The good news is: all of her food is this amazing and 100% seasonal. If you’re in Livingston and she’s open, count yourself blessed.

Our family fell in love with Jackalope Provisions when we spent summer in Livingston in 2023. We got to get lunch there almost every single day, and it was always a delight. The food was fresh, inventive, and made with a deep love and appreciation for the local farming community.

These days, despite living in Bozeman, we drive for 30 minutes just to get lunch at Jackalope – the food truck is that good. And now, with seating being available, it’s so easy to enjoy a bite and a drink from Jackalope while people (and dog) watching! Highly recommended.

OMG! Jackalope Provisions in an airstream. This place is incredible. Their value system of buying local, which means a menu redo weekly, and eating in season. I just had their power bowl with black lentils, feta, heirloom tomatoes, grilled zucchini, carrots, even pickled fennel etc the lemon parsley dressing! The flavor, the flavor, THE FLAVOR. REALLY REALLY GOOD FOOD. And the sneakily good brownie is a must. Jackie accommodated my requests. Monday-Thursday 11am-3pm. This food truck is for the foodie! LOVE THE NAME.

Delicious food that makes your whole body smile! The menu changes weekly so there is always something new to try, the ingredients are locally sourced and even the packaging is sustainable. So far I’ve tried the curry meatballs over quinoa, a power bowl and the chard salad (all of which were out of this world). Don’t forget to grab some of the curry Chex mix for a snack later. So grateful to have this wonderful food truck two blocks from my office…I will be there weekly, at a minimum.

Would give 10 stars if we could! The care, preparation, and planning that go into this healthy and tasty food does not go unnoticed. We ordered online just before they opened, and it did take awhile to make, but was well worth the wait.
