Saltbrush was born out of a passion for food, wine, and the joy of bringing people together. Founder Neil Grant brings decades of experience from owning and managing three successful restaurants in his native South Africa. His vision for Saltbrush has always been to create a space with a warm, welcoming ambiance paired with world-class cuisine and wine. Saltbrush was created to provide Boise with elevated dining, uniquely combined with a relaxed and inviting feel.

Saltbrush was a 10 out of 10 for us. The bartenders were genuinely kind and welcoming, and the service felt effortless the whole night.
The food was absolutely amazing and the drinks were perfectly done. You can tell there’s real attention to detail behind everything that comes out.
The atmosphere deserves its own mention. The space is beautiful inside, but more than that, it has this warm, comforting energy that makes you want to stay awhile. It feels thoughtful and inviting without trying too hard.
I couldn’t give it a higher rating, but I honestly would if I could.

You come in for the duck fat potatoes – 3 amazing bites of food that start the dinner and could be the main course; if you wish to continue, you’ll be delighted by the rest of the appetizers, arancini fried to perfection with a wonderful fall inspired flavor profile, roasted carrots and the SRF New York Strip, roasty, smoky and crusted to perfection. To finish, the Marigold Pudding, which tastes like a tres leches and butter cake made a sinful offspring of toasty, moist, full flavored cake and then 2 scoops of plum ice cream, featuring fresh flavors and deep undertones of clove and anise. Saltbrush shines downtown as intimate, fresh and locally sourced.

Saltbrush, what a gem you are!!! This seriously was one of the best dining experiences ever. The staff was so kind! And the manager, Koko (hope that’s right) was extremely accommodating for my sister’s birthday. Our waiter, didn’t catch his name, was attentive & our water cups were ALWAYS full. It felt special & warm. The food was delicious. The duck fat potatoes were amazing!!! The sourdough was divine & the drinks were delightful. 100/10 recommend for an impressionable dinner date, birthday, or special occasion.

I went here once previously, with family and didn’t know what to expect. We had a great experience, the food was perfection, and I think everyone in the entire range of staff checked on us to make sure we were happy and taken care of, including the manager. A celebratory dinner right around Christmas this year, and it was absolute perfection. We’ve dined out at a lot of nicer places in Boise, but we usually go to average priced restaurants. This was, by far, the best dining experience that I have had living in Boise for the last 8 years. I am not joking, our waitress, I believe her name was Kate, was communicative, solicitous without being obnoxiously hovering, absolutely lovely at presenting the menu and recommendations. The cocktails we had were fabulous, and the food was just amazing. We started with the duck fat potato, which was insanely great. I don’t like eggs but the sauce, everything and the flavors, was impeccable. Then we had the wild Thai snapper, and my boyfriend had the confit duck legs. The snapper was lovely, perfectly textured, honestly a huge portion. The curry was divine. Celebrated a friends birthday at Saltbrush and they did not dissapoint. The space is very soothing and understatedly elegant. Service was friendly and top notch. They respected our time and didn’t rush us at all. The food was all perfectly prepared. Probably the best polenta we’ve had on this continent was served with the porkchop. Homemade tagliatelle was super tasty. Owner poured the bottle of wine from Slovenia we ordered and shared the story of the family winery. Very well done all around! Save room for the seasonal desserts.

Food and cocktails here were great but honestly this may have been the best serviced restaurant I’ve ever been to. Everyone was very attentive and able to make suggestions or provide small requests.
I 100% recommend this place if you’re visiting Boise. I will absolutely be coming back next trip out that way. Really enjoyed the dining experience and the food was fantastic.

Fantastic place and great food. The support staff was outstanding, and the atmosphere light and lovely. HOWEVER, the main waiter was seemed like he should have been at a more casual restaurant, just doing his job and waiting to go home. We had to ask other staff once to have him come over to take our main order which seemed odd as it was empty. Over all? It’s a good place based on the food but I doubt I’ll return based on the main service. This being said, I’m used to chandlers service so am probably very spoiled.

They have beautiful decor, almost a classical/retro look. The service was top notch, I don’t think my water glass got below half full the entire meal. The Waitress was knowledgeable about the beer selection and she was on top of everything during our whole meal. The manager came over to our table, as he did all the tables. The wine list is 6 pages long and he was very knowledgeable about all of it. He gave very good advice on which wine would go with all our meals.
The appetizers were excellent, especially the Cabbage Rolled Pork and the Coal fired Carrots. The sourdough bread with whipped butter was fantastic.
I had the Thai Wild Snapper with Coconut Curry but don’t be alarmed it’s not hot in any way, it has a wonderful tangy taste that goes along with the natural flavor of the Snapper. I would definitely recommend going here.

On Saturday, 1/17, my wife and I, along with friends, dined at Saltbrush, and I honestly don’t know if words can fully capture how incredible the entire evening was. This was her birthday dinner, and from the moment you walk through the doors, you’re welcomed into an atmosphere that is both relaxing and elegant. The tables are thoughtfully spaced, allowing for private conversation without feeling crowded, which made the experience even more enjoyable.
The staff truly goes above and beyond for every guest. You can tell just by observing the room how attentive and detail-oriented each member of the team is, ensuring everyone feels well cared for throughout the evening.
And then there is the reason you come to a restaurant—the food. Saltbrush’s farm-to-table concept, using exclusively locally sourced ingredients, showcases each dish in ways we had never seen before. The fact that they cure their own meats in-house—something that is a first for Boise—only adds to how special the experience is.
This meal easily ranks among the top five dining experiences my wife and I have ever had. We will absolutely be returning to Saltbrush for many more memorable evenings.

Food was excellent, even for a couple of people who don’t like to dip our toes into new avenues. We spent parts of the day reviewing the menu because it is out of our comfort zone; and we wanted to know what to expect.
We landed on the sourdough bread starter which was great! Very fresh and well done.
Small plates we chose the pork cabbage rolls- which we weren’t too sure about but again, stepping out of our comfort zone. And personally they are one of my favorite choices from tonight.
We also had the asparagus which was great, but definitely a more safe choice.
I had the lamb and LOVED it! I am not one to veer away from chicken or steak but I really did enjoy this dish.
My husband had the steak and really liked it as well. He’s not a fan of NY strip but said it was pretty good.
Overall my husband and I had a really good experience. Staff was so organized and communicative, food was delicious, atmosphere was classy and relaxing.
A good place to try if you’re looking for something new!
