If you are looking for authentic Colombian flavors, ¡Qué Chimba! is a must-visit. I tried the Empanadas ($13.40), and they were incredible—perfectly golden, crispy cornmeal crust and generously packed with a savory shredded meat filling.
The highlight for me, though, was the white sauce! It was absolutely amazing and added the perfect creamy kick to every bite. The food truly lives up to the “Sabor a Casa” (taste of home) section of their menu. Great service and even better food. I’ll definitely be back to try the Bandeja Paisa next!

Que Chimba is right! My Bogotano husband and I have been following their food truck in Auburn for a couple of years and we’re so happy they’re now in our back yard. They’ve been open a week and we’ve been 3x! Get the sancocho! And empanadas are great. The owner Señora Monica is great and friendly as are all the staff

Mi experiencia en Quichibra lamentablemente no fue la mejor. Entiendo que es un restaurante nuevo y que al comienzo pueden existir algunos ajustes, pero nuestra visita fue bastante complicada.
Desde que llegamos tuvimos que esperar mucho tiempo para ser atendidas, y luego la espera para la comida fue aún más larga. Pedimos dos bandejas paisas: la primera llegó después de bastante tiempo y la segunda mucho después. En total llevábamos casi una hora y media esperando y aún no nos habían traído los jugos.
Además, en la mesa no había cubiertos cuando llegó la comida. El aguacate de la bandeja estaba negro y el arroz tenía un sabor dulce, lo cual no es lo tradicional para una bandeja paisa. También había bastante humo dentro del establecimiento, lo que hacía el ambiente un poco incómodo.
Algo positivo es que la música estaba buena y el ambiente podría ser agradable si se organizara mejor el servicio.
Espero que puedan mejorar la organización y los tiempos de atención, porque el lugar tiene potencial, pero definitivamente hay mucho por ajustar en este momento.
