SALTY SEAFOOD ZWOLLE

Fish shops turned street-food joints are a staple in the Netherlands. You know the scene, plastic chairs, grease-stained tables, lekkerbekjes and kibbeling, maybe a blob of remoulade and a Hollandse Nieuwe to wash it down. I’ll snag a ‘bakje kibbeling’ first thing, arriving in Holland. And frankly, give me a perfectly prepared fish dish over a massive steak any day.

Then, in 2022, Zwolle, the town I called home for years, welcomed Salty Seafood, the city’s first serious seafood restaurant. It’s run by Chef Nino Willems (Beluga, De Kromme Watergang, seven years at De Librije as sous and pastry chef) and partner Aysen Bilal (former Maître d’ at De Librije and Poppe, now curating fearless wine and cocktails, red wine with fish, yes they do). They squeezed 22 seats into a cozy street between the main squares, opposite a former church. On a sunny day, you half expect to hear French spoken in the air. Inside is like a bistro in Bordeaux, warm, relaxed, no airs, no attitudes. The bar doubles as the chef’s counter, the kitchen is barely bigger than one station at Locavore NXT, yet fully open. Each seat feels like a chef’s table. I suspect this might be the future of fine dining: small, accessible, high-end.

Nino’s roots are Zeeuws, developing a love for seafood early on. Now, he’s been crowned Gault‑Millau’s “New Chef on the Block 2024” for making “refined fish dishes that remain accessible.” My dining partner and I served our plates back so clean they might’ve gone straight to the cupboard. Silence fell over every course as we savored each bite. Accessible is not boring here. These dishes are like still lakes with hidden currents, flavors that take you deep without losing you in the rip. And wine pairing? On point.

We went with a six-course tasting plus oysters. Every dish was fish, except dessert. When each course finished, I felt a twinge of regret, not because they were small, but because I simply didn’t want the flavor ride to end.

I like fish. I’m not afraid of flavor. Fishy taste isn’t sloppy here, it’s replaced by precision. That’s what makes Salty Seafood so compelling. Though fish is not a big hit for the Dutch, this place shows how fish can fuel your soul all night long.

We are foodies with a passion and as such we love trying out new restaurants and recommended ones regularly. For us the Salty is the most incredible discovery in the last five years. We now have been three times here and have never had a single dish that was not amazing in every sense of the word. It is – again – a good example why Michelin ratings are (maybe strongly) overrated as the Salty easily beats many of those on our list. Deep-heartedly recommended, don’t miss this jewel.

We celebrated my girlfriend’s birthday at Salty in Zwolle, and it was a remarkable experience. The restaurant specializes in seafood, and we chose a four-course meal that exceeded our expectations.

Everything was wonderful, although the portions are a bit small. The wine went very well with the selection, even the red with seafood. The only reason it’s four stars instead of five is the price is a little bit high compared to the portions.
