Got the birria tacos and the mulita. The mulita was one of the best things I’ve eaten in a long time. Was . The sauces they give you are awesome as well. Portion sizes were great for the price. Walked away full, and I’m a bigger guy. Just randomly stopped by and will definitely be making this a routine stop on my way through Redmond. HIGHLY recommend.

If you’re looking for a filling and delicious snack for $5.00 this is the place to go. I had a mulita which is two crispy taco shells with shredded beef and tons of cheese and some scallions and probably some other things but that’s the main part of it. They give you a slice of lime, 2 different salsas and their special dipping sauce which makes it a crispy and juicy meal. It’s a cart of course but it’s got a roof over picnic tables and is just fine. You’re out of the sun. I bet the rest of the menu is just as good.

So happy we stopped by and tried La Birria the Ramen, and the Quesadilla was excellent. The broth in the ramen was savory and beefy. The meat was tender in both the ramen and quesadilla. It was nice to have the Lime wedges and extra sauce included as well.

Will go again today and try something else and inevitably be disappointed I didn’t get the ramen, but oh so happy with whatever delicious birria stuffed delight I do get.
Go twice, go five times, go over and over, this place has crazy good birria.
Horchata was good as well.

Amazing birria! Stopped for lunch on our way to Smith Rock and got so excited to see an entire food truck dedicated to birria. We had the burrito, ramen, and tacos. Everything was cooked perfectly and made to order (some dishes without cilantro). The cheese in the tacos was perfectly melted and the tortillas were the right amount of crunchy and chewy. I might drive just to Redmond again to get these tacos. Seriously, so good.
Also liked that there was an enclosed playground for kids at the pod, that made it really nice for the kids to do something while waiting for our food!

If you dont want something on your food make sure you make it very clear to them. I asked for a birria burrito with no guacamole (i have a texture thing with guacamole can’t do it) they say ok that’ll be right out and hand me a buzzer. A few minutes later I have my food and am headed home. 30 minutes later I arrive home and sit down ready to dig in and my very first bite is almost entirely guacamole.

I love birria, and this food truck did NOT disappoint! The original birria street tacos are fantastic, and the quesabirria was delicious! It’s a quesadilla filled with birria, cheese, sour cream, cilantro and onions, how could it not be scrumptious? If you live in Redmond this could be your new favorite food truck. If you’re passing through, I do not think you’ll be disappointed. Birria is a flavorful Mexican stew or soup bursting with flavor from the marinating and cooking process. The meat shreds easily and the broth/juices are used for dipping. ¡Birria es mi favorito!

So the flavor is good, but definitely was not a good value for my money. I could barely see that it had any cilantro or onions. The meat was there but not a lot at all, and the ramen was slightly under cooked showing more starchy white than translucent as they should be. Another great example of despising pre tipping or auto tipping. It was definitely not worth a tip, but the pre tipping got me yet again. I will go elsewhere for my birria next, and I don’t recommend them.
