My wife is vegetarian and she loves it too!
Eddy was an absolutely phenomenal server. Knowledgeable, friendly, and perfectly paced — he made the experience seamless without ever being intrusive. He clearly takes pride in his work and made sure everything was perfect from start to finish.
And shoutout to Tito as well — such a great presence and part of what makes the team at Kihon feel so dialed-in and welcoming. The staff here works together effortlessly, and it shows.
Between the hospitality, the service, and the overall vibe, Kihon stands out as one of the best dining experiences in Long Beach. This is the kind of place you don’t just visit once — you come back for the people. Highly, highly recommend.
Really, you will be fully satisfied with any sashimi cut. There is always a nice variety. Yellowtail, mackerel, salmon…oh and the eel, sooo good.
