We both ordered the eggrolls – which were fried nicely and paired well with the pho. I ordered the seafood pho with crab and shrimp only. The pho came out steaming out and was delicious on a chilly day!

The pho okay, it wasn’t bad but it wasn’t my favorite? I generally look for a piping hot clean soup, this was more of a 7/10 on that scale. The flavors were really good & the noodles seemed skinnier than most, which I actually liked a lot better. A large bowl is already a huge serving, the meatballs were average. I had one that was shaped like a heart.
Springrolls, 9/10. Pork springrolls 7/10. Chicken springrolls 7/10. In the last two felt there was a lack of meat. Grilled pork with rice, excellent, 10/10. Combination fried rice 8/10.
Service was fine, they have some booths. We sat at the tables, they have tables put together with the chairs one after the other. It didn’t affect us since it wasn’t crazy busy but I don’t know how comfortable & spacious that would be for customers had it been busier. Waiter that took our order was kinda meh, he seemed impatient as well as the lady who took care of our check & didn’t bring back a receipt as we had selected to have a copy when we paid.
They have been here for years, so I am sure they are doing something right. Maybe an off day, new staff or whatever. I’ll probably still come back at some point & it was still a good meal.
Seriously, the broth is fragrant and delicious and the side of jalapeños, Thai basil, bean sprouts, and onions are always fresh. I particularly enjoy it with a pot of jasmine tea.
The waitstaff is always friendly and attentive no matter how busy it gets. I think it’s much easier to walk around in the current location versus their previous one (that had lots of family style seating). It’s hard for me to drive past Phở Pasteur without stopping for a bite. I definitely recommend it.
Now, I’m picky when it comes to Pho. Too many bowls out there play the part but don’t deliver the soul. This one? Different! The Large “Pasteur Combo” Pho (PD1) hit like the main character entering the frame… Bold, steaming, and absolutely on point. Every sip of broth was a plot twist, every bite of tender meat a supporting role that made the story richer.
I opened with the Egg roll appetizer, and let me tell you, that was the perfect prologue. Crispy, golden, and gone too fast. A cold Coke with ice played the sidekick, keeping pace with the heat of the meal.
It was just me at the table, but the experience felt bigger than that. $25.32 later (cash tip included), I walked out not just full, but satisfied like I’d just finished a chapter worth rereading.
Five stars. No hesitation. If you’re in Arlington and craving Pho, this place isn’t just food, it’s a story you’ll want to tell!
I ordered shaken beef from Pho Pasteur and discovered a bug in the dish. I called the restaurant immediately, but the manager denied responsibility, saying “we don’t have that kind of bug in the restaurant.” I explained that it was in the lettuce, which clearly hadn’t been washed properly. They refused to issue a refund and even hung up on me. I called back and they hung up again. Extremely rude and unprofessional. Very disappointed with how they handled the situation and their complete lack of accountability.
Typical Vietnamese pho restaurant decor—nothing fancy, but it works.
I ordered a small pho with rare steak, flank steak, fatty brisket, and added meatballs. I judge pho by the broth first, then noodles, then toppings.
* Broth: Temperature was spot on—hot but not scorching. Way better than some ramen spots where it’s barely warm. The broth was a little cloudy and brown, not crystal clear. If you know, you know—look it up. Pro tip: if you’re using sriracha and hoisin, don’t dump it in your bowl. Get a small dish, dip your meat, and keep the broth clean. Trust me. Rating: 3 stars
* Noodles: No complaints here. They weren’t clumpy, held up in the soup, and had that smooth, slippery texture. Rating: 4 stars
* Toppings: Fatty brisket was tender and chewy. Flank steak was a bit too firm and dry. Rare steak came fully cooked, which was a letdown—it should be raw on top so it cooks gently in the broth. Rating: 3 stars
* Greens: Fresh and on point. Not hard to get right, but still appreciated.
On the side, I ordered the Vietnamese egg rolls—zesty, flavorful, and served hot with lettuce and shredded carrots. These were easily the star of the meal. Wrap them in lettuce, toss in the carrots, and eat it like a taco. 5 stars. I’d come back just for these.
Also tried the Heavenly dessert—a bit watery, but they didn’t skimp on the jackfruit and logan. Almost gave it a 3, but I’ll call it a solid 4 stars.
Service was straight to the point—some might say blunt, but I didn’t mind. Ambience was chill but a little dark, and again, decor was standard Vietnamese restaurant vibes.
Total bill was around $34 with tip.
Overall, it did the job. I’d recommend it—and definitely don’t skip the egg rolls.
