If you’re a fan of Vietnamese cuisine, you’ve probably come across plenty of recommendations for bún bò Huế spots around town. But here’s a bold claim: Phở Gánh serves the best bún bò Huế in all of Melbourne. It’s astonishingly authentic — everything from the herbs to the meats to that deep, fragrant broth tastes exactly like it does back home in Vietnam. The portions are massive, and every bowl feels well worth the price.

That said, if you’re more of a northern phở purist, you might prefer other places. Phở Gánh’s take is distinctly southern — sweeter, richer, and unapologetically bold in flavor.

Pho Ganh is hands down my go-to spot every time I’m in Melbourne — no trip feels complete without a bowl here. Their pho is honestly the best I’ve ever had, and I always order the tái sống with wine beef noodle soup — it’s rich, aromatic, and consistently delicious.

The vibe of the place feels authentic and comforting, and the food always comes out fresh and steaming hot. You can tell they put real love into the broth.

One little thing though — the door. The screeching noise when it opens is unbelievably loud and a bit distracting. Please, please, please swap it out for a quieter doorbell or something else that doesn’t make everyone jump when someone walks in.

Food? Perfection. Service? Warm.
Door? Needs a fix.

But beyond that, Pho Ganh is 100% a must-visit in Melbourne.

I ordered Pho Suon Bo and my girlfriend ordered Pho Thap Cam. Both tasted very much like what we eat in Hanoi. The atmosphere with modern Vietnamese music was really giving out the nostalgic vibe. Hope the chef can keep the taste consistent like this.

Pho Ganh Tonkin 1913 hits the spot the way a proper bowl should. The room is compact and always humming, which is a good sign, and the staff move with that friendly efficiency you want when you are hungry. My pho arrived steaming with a clear, aromatic broth that tasted layered rather than salty, the kind where star anise and charred onion show up without shouting. The noodles were silky and not clumped, the rare beef was tender and blushed perfectly, and the brisket had that soft, comforting chew. A squeeze of lime, a touch of chili, and it all came together. I appreciated that the garnishes were fresh and sensible, not a mountain of herbs that drown the bowl.

Portions are generous without being silly. If you like texture, add tendon or tripe and the broth holds it all. The sides are worth a look too. Fresh rice paper rolls were neatly wrapped and full of herbs, and the fried spring rolls stayed crisp to the last bite. Vietnamese iced coffee lands strong and sweet, exactly what you want with hot soup, and the hot tea is a nice reset if you are taking it slow. Everything came out quickly and piping hot, which is half the comfort.

A few tips. The lunch rush is real, so swing a little early or late for a relaxed seat. Ask for chili on the side if you are testing your heat tolerance, and do not skip the house chili oil if you like fragrance with your spice. Tables turn fast, prices are fair for the quality, and the room stays tidy even when it is busy. It is the kind of place you return to when the weather turns or you just want something honest and warming.

First time trying the pho here and I was blown away. Couldn’t fault the pho here. Quality tender meat with generous portion. Service is attentive and down to earth. Calm atmosphere with clean and pleasant setting with air con.
Will definitely come back next time to try their Bun Bo Hue as recommended in many reviews.

Such a hidden gem in St Albans. It could have easily fooled me with its quiet outlook.

I’ve been to many Vietnamese spots locally; this one stands out for value. Had the spicy beef noodle today: tasty, lots of meat, huge portion for $19 (rare in the CBD). Super quick service! Only downside: portion was too big for me, even regular size, maybe offer a smaller, cheaper option. Atmosphere and staff attitude could be improved.

A Vietnamese restaurant with strictly pho on their menu and different sorts of meats to have with it. I went for their fatty brisket, beef balls and rare beef to go in the mixed pho order. Had a Vietnamese black coffee as a drink and oh it was definitely stronger than your usual ones!

The pho broth is great and so were all the meats and noodles, the fatty brisket was a little chewy but I guess that’s how it is. A very fulfilling lunch for a chilly and windy day! Thanks for the pho, Tonkin!

Out And About
Pho Ganh opens surprisingly early compared to other restaurants and that’s a bonus for me! Came in at 10am and dived straight into the traditional Pho Tai, rare beef noodle soup.
Beef was tender, soup was hot and fragrant. On the table you have the usual sauces with the added bonus of pickled sliced garlic.
I also ordered the donuts which you can dip into hot coffee (something I used to have as a child with the parents) or you can simply add to your soup. Donuts are so fresh and crisp on the outside and soft on the inside. Absolute delight.
