The Agave Diner aims to pay homage to its origins by offering all of the classic American diner menu items and pay tribute to its new stewards by offering fresh, fun Mexican breakfast and lunch items as well. Husband and wife team Antonio and Lauren are excited to partner with local farms and vendors to bring the freshest breakfast experience to the valley!

Amazing diner. Ambiance and service are great. Pancakes are phenomenal. Served with real syrup in a maple butter concoction. The Mexican dishes are lovely, like chilaquiles or Mexican Benedict. Everyone is floored by the tres leches pancakes. Get their house made salsas on the side too.

Agave Diner in Seymour, CT truly surprised me in the best way. We visited a few months ago, and I still catch myself thinking about how good everything was. Honestly, it’s the best diner experience I’ve had so far.

The food is freshly made, flavorful, and so satisfying. For a small diner, they deliver big and everything we ordered was incredibly good. Definitely a spot we’d return to whenever we’re in the area again.

If you want some delicious unique breakfast items I Highly recommend visiting the Agave Diner! We tried the tres leche pancakes and they are to die for, and don’t worry they are not drowned in the milk the amount they added was just perfect to not make the pancakes soggy! My birria omelette was delicious all of the flavors blended perfectly! And their bacon is top tier not that cheap flimsy one most places serve! The staff is so warm and attentive as well we drove an hour to try them out and we can’t wait to go back!

There are some pretty wonderful people working there, bless the hands that made this food! I HIGHLY recommend coming in and visiting. The staff are incredibly efficient, respectful and kind! I’m lucky to say I’ve tried many options on the menu, I’ve never ever been disappointed! The coffee is delicious as well as the other beverage options they have in house. 10/10

Truly amazing and unexpected food at this little old diner. Clearly, the chef knows what he’s doing. Don’t sell yourself short and get something boring, although even the boring stuff is exceptional. It’s an old-school diner, complete with formica counters, rotating stools, booths, and an airplane – sized bathroom. Not much to look at but if you’re looking for old school, you found it!

I’ve been coming here since they opened. Not once have a I had something just good from here, it has always been excellent. They are consistent too. I always know I’m going to get the same flavor from day one. Truly a business that takes food extra serious. Customer service is just as good as the food. A cool small hometown gem. This is their French toast with 2 eggs and sausage. Keep it up agave crew. You all are the best

Drove an hour to try the Tres Leches pancakes and Birria omelette. 100% worth every mile. The service was exceptionally friendly and welcoming. Will definitely be returning for the Churro French Toast…and the rest of the menu!

This was our first time at this tiny Mexican Diner. It won’t be the last. The portions were huge and prices very reasonable. I wish I ordered the pancakes because they looked delicious. The breakfast burrito is massive. The service is wonderful. They only serve breakfast and lunch and they are closed on Mondays.

Great breakfast! Nice unique options! Mexican Benedict w carnitas was really tasty! The pancake/ French toast entrees are delicious as well. It’s a small diner – only 5(?) booths and approx. 8 seats at the counter. Worth the wait, though! Excellent coffee as well. We want to visit for lunch soon!

Tiny spot in a random town but such good breakfast. We had the chilaquiles and Mexican Benedict, each dish was easily enough for 2 people! Even though the portions were huge, it was reasonably priced and very delicious. The waiter was friendly and the place was very clean. It was a little cramped navigating inside, and the outdoor area to wait wasn’t very comfortable because someone was smoking cigarettes, but otherwise it was a cute spot!
