Went in, not realizing it was their first day in business. Owner mentioned that he noticed a need for this kind of place on State Street and I can’t agree more — this should be your go-to stop for post-game, late-night, 2am munchie-hit, mac and cheese.
The noodles are cooked to order which seems like an awesome touch. I went for a basic order of just aged cheese and it is a good combo of cheesiness and creaminess. They run the plate through what looks like a bagel toaster so it turns out being a more baked mac and cheese. The aged cheddar is not too sharp, so be prepared to try one of the after bake sauces to give it more zip (I certainly will on the next order). What REALLY impressed me is that I can eat this without feeling heavy/bloated after. Other mac and cheeses around the Capitol or for food festivals generally sit weird. This however, is very filling, tasty, and doesn’t make me hate myself for eating it.
The real surprise for me, however, is the garlic bread. It comes toasted with your order and is the absolute right combo of toastiness and garlic spices. It isn’t burnt (which I hate) but still has a good crunch when you bite into it. It really helped top off my order.
Hope the students find it and give it a shot, cause, let’s be real here, Potbelly’s mac and cheese is a crime and it’s way too hard to order just plain mac and cheese at Memorial Union.
