Let me tell you about my server Marnie. What a rockstar! She was attentive without being overbearing. Amazing server. Can’t say enough about her. Now, I ordered the 10oz ribeye with 1/2 fried chicken, a side salad and southern green beans. I’m a steak snob so I wasn’t expecting much because the price is SO LOW! I mean 25 bucks?! Shut up! The steak was cooked perfectly. And I mean the perfect med-rare to medium. And that’s no small feat… me being a steak snob and all. Well done. This dining experience beat out Ruston Cattle Co. in Ennis.

This evening was our family get together for my sister-in-law Joyce’s birthday. It’s a little busy on a Saturday at 6:00. But we were seated in a timely manner. Greeted soon at our table, food came out accordingly. A few little minor hiccups, but were fixed quickly. Food was fresh and hot. I love the dinner rolls and butter . A great place to meet family and friends. Plenty of room for large groups and small groups as well. I didn’t get our waitress name yet she was great at multitasking other tables along with ours as we were a group of seven people. If you’re looking for getting together with your family or friends, I would suggest Heitmiller Steakhouse restaurant. I give this restaurant five stars. Yes, it’s a little loud. And yes, it’s a little busy. Cleanly appearance of the restaurant, courtesy employees, taste of food and drinks was awesome. Customer service all rolled into one. It’s why I would highly recommend HMS restaurant. Thanks, to my Mother in law Olivia, for paying for dinner tonight .

I visited Heitmiller Steakhouse and ordered the prime rib with green beans and mashed potatoes with brown gravy, and overall, it was an excellent experience. The prime rib was tender, juicy, and cooked to perfection with a flavorful crust that had just the right amount of seasoning. It had that classic smoky, beefy richness that makes a good prime rib stand out. The mashed potatoes were creamy, buttery, and smooth, complemented perfectly by the rich, savory brown gravy that had a nice depth of flavor. The green beans were fresh, crisp, and well-seasoned, adding a nice touch of balance to the heavier parts of the meal.

The portion sizes were generous, and the plate was presented neatly and appetizingly. The service was warm, attentive, and professional—our server made sure drinks were always full and checked in just the right amount. The restaurant itself had a cozy, rustic atmosphere that felt welcoming and true to the Texas steakhouse style.

Overall, Heitmiller Steakhouse delivered a hearty, satisfying meal with great service and a comfortable dining experience. The prime rib alone makes it worth the visit, and I’d definitely return to try a few more items from their menu.

Order 2 steaks both were severely undercooked, when I ask about our steaks was told we could take them home to our dogs server commented ok and walked off. Had to ask to have one removed off bill as it was BLACK and burnt when recooked. No refills of drinks, server was certainly not attentive and had to be asked multiple times for something. Had to ask for rolls as a hey we’re not offered. This was our first time at this establishment And ever eating at a Heitmiller steakhouse was not a good first impression at all. Would have rather waited a few more minutes and gone to Texas Roadhouse where we would have NOT been treated like this. Lessons learned, you can do better than this! Waste of money.

While working in Waco I decided I wanted a steak because the last three places I had eaten at in other places were downright just terrible. This had good reviews and I know I have seen it for many years out off the loop.
I came in, alone sat at the bar, bartender was knowledgeable about Waco and of course the menu.
I got a water and then a bourbon on the rocks ordered the bone in largest ribeye they have, cooked medium with sweet potato and sauteed mushrooms.
The steak came and was absolutely perfectly done the way I asked. It seemed to have a pretty good char and as it sat I could see the juices were drawn back up into the steak some, then released again as I cut. Of course the only thing left on my plate was the bone and one tiny strip of cartilage which of course has to be there because of the bone in.
I was extremely happy because the steak was not overpriced like the majority of box store steakhouses, need not mention the names. I don’t know why the restaurant was not more full, it was a normal weeknight I can’t remember which one but anyway service was good The bar is comfortable, nice selection of alcohols depending on what you like, and the steak was absolutely fantastic especially for the price.
This will be my new place every time I come and stay in Waco working.

We went there on Friday night with a group of 12 people. This restaurant is used to large groups and handles them well as they have in the past with us. However tonight was HORRIBLE!!! We did not have to wait long for a table only about 10 minutes. But our server was unprepared as it was apparently her first week and they put her on the floor by herself on a Friday night. That’s poor management skills on the managers. But I digress… We ordered our drinks, it took over an hour for us to get our drinks at the table, and every drink was wrong. My wife and I ordered two of their signature drinks from the table tent, and they were not what was even ordered. An hour and a half later when they finally did show up, they were poorly made and almost not palatable. Between my wife and I we ordered a wedge salad, and the calf fries. It took an hour and 15 minutes for those to show up, when the calf fries showed up they were Stone Cold and hard and rubbery. The manager came by and said she would take those off our bill and replace them for us… I was like you think? So the second round of calf fries were lukewarm but still chewy. If you love calf fries you know this is not a good calf fry. At least the fried okra was hot. The wedge salad was okay nothing special to ride home about. Oh by the way I should mention, that we’re an hour and a half into this meal, and there’s not one glass of water on the table. It took 45 minutes to get rolls on the table from when The server said they were going to bring some rolls to us. Literally everybody left hungry and disgusted after 2 hours, and then went over to McDonald’s to pick up a little cheeseburger. I don’t know what’s going on with this restaurant but I will avoid it like the plague next time we are in Waco. Also I’ve never done this in my life, but I did not tip… There was nothing that indicated it wasn’t the server’s fault as tables around us from different servers all got their food in a timely manner, and we’re finished and out the door before us, even though they sat down after us.

Do yourself a favor skip the hype Go to one of the new restaurants and give them a chance.

I was family visiting my aunt for an 80th birthday and there was a problem with the bill. My experience is why were the police called with the entire restaurant customers watching. When I asked the host and the manager working the night of Feb. 28, 2026 for her name, she was extremely nasty to me involving me in a situation that had nothing to do with me. She told me it was a family owned business and his name was Gary. I felt she was extremely disappointed for my first experience with the establishment, including the host staff on duty that night when I asked to speak to someone in charge. This establishment is located in Waco TX HWY 35.
