Started with the Quetzalcóatl cocktail (mezcal, dragon fruit cordial, lime, topped with feather gummies) – it set the tone for what was coming.
They start you off with tostadas and an array of salsas – all fantastic, my favorite being the pepitas salsa. We tried the Fresh Smoked Guacamole – it arrives under a glass jar to hold the smoke in – it was good, but I could barely taste the smoke. More of an accompaniment than a standout on its own. The Wagyu Beef Tiradito, though, was amazing – basically wagyu sashimi cooked black and blue, marinated in house-made ponzu, topped with avocado, roasted onion, and razurada piquin. My son had the Achiote Salmon – flavorful spicy, not spicy for no reason, and he loved it.
The Chilmoli Churrasco (serves 4) arrived on a large skewer and was plated tableside. Picanha, ribeye, achiote chicken, and lamb lollipops. The picanha and chicken were my favorites, but my family finished most of the chicken before I got to it and I didn’t even get a lollipop. That’s how good it was. Served with Roasted Oyster Mushrooms and Truffle Fries. My wife thought the mushrooms were octopus at first, and my parents who aren’t into mushrooms were all over them too. That house-made ponzu magic again.
The tableside salsa de tomatillo was something else entirely – they torch roasted the tomatillos right in front of us and worked them into this silky, smoky salsa with the consistency of a good baba ghanoush. Not a garnish, not a side note. Integral to the meal.
Then dessert. The Choco Peanut was studded with Ferreros, marshmallows piled around the side and torch flamed tableside, served with vanilla bean ice cream. The Strawberry Cheesecake came with dehydrated strawberry slices studded into the ice cream. I don’t even like cheesecake and it was the best I’ve ever had.
This is the kind of dining experience the RGV has been missing. Worth every penny.
I called on Tuesday, February 3rd at 9:30 a.m. to make a reservation for Friday, February 6th at 7:00 p.m. for 7 people, to celebrate a birthday dinner. When we arrived, the reservation did not exist. After checking the confirmation message, it was clearly their mistake: they had booked it for the 7th instead of the 6th, as requested.
Instead of taking responsibility or offering a real solution, the receptionist simply told us to come back the next day, as if a birthday celebration could be rescheduled that easily. There was no accountability, no empathy, and no professional attempt to fix the situation.
After explaining how much effort goes into organizing a birthday night — makeup, outfit, guests coordinating schedules, traffic, parking — we were told we could maybe wait until 9:45 p.m., almost 3 hours after our reservation time. Then, after making us wait, they promised us a table… only to take it back minutes later, saying all other reservations were confirmed. They made us wait for absolutely nothing.
The result: scrambling to find another restaurant at the last minute, a ruined birthday celebration, and leaving downtown completely frustrated.
I can’t comment on the food, but I can comment on their terrible conflict resolution, poor customer service, and a manager who clearly did not know how to handle the situation.
Honestly, if they can’t manage reservations properly, they should remove them entirely and operate on a waitlist or first-come, first-served basis. That would prevent them from ruining important moments for their customers.
I truly hope this reaches the owners and that they take action for the sake of future guests.
We made the trip from Edinburg, and I only wish we lived closer because it’s easily worth the drive. The bar menu was equally impressive.Our drinks were infused with fresh, high-quality ingredients and tasted phenomenal.
Our server, Adolfo, was exceptional,his deep knowledge of the menu and its history brought the entire experience to another level. This was truly some of the best food we’ve ever had, and that’s saying something since we’ve traveled extensively both within and outside the country. Without a doubt, this restaurant has earned a spot in our top three. We can’t wait to return!
Biggest shoutout goes to our waiter, Luis. He did an awesome job—attentive, professional, and on point the entire time without being overbearing. Drinks stayed full, food came out right, and everything flowed smoothly.
Solid service like that makes a big difference. We’ll definitely be back
