The place is cute but was full of flies when I was there. The ribs I carried out to eat at home were positively awful…way over cooked with a texture tougher than jerky. These ribs should never have been sold. They were so overcooked that there was no chewable meat.

The Missus and I dropped by Fat Toney’s in Garnett mid-afternoon on a Friday. One of the owners and the Bond Company Stooge* staffed the counter/kitchen. We ordered a brisket/sausage sandwich and a half slab of St. Louis trimmed pork ribs. With one bag of chips and two large sodas, the tab came in right at $30.
As a certified KCBS barbeque judge, I could – and probably should – run this joint through the grinder. There were several problems, perhaps bordering on many problems. But this is where I’m going to take an optimistic left turn. This joint is in Garnett, Kansas. In itself, not a destination, and running a restaurant there has to be a big challenge. Also, this restaurant is new, just opened about three months ago. There will always be kinks and it takes time to work them out. That’s where the optimism kicks in.
I loved that the owner was not only on-site, but personally smoking and serving the Q. He is constantly in contact with his product. He sees and handles the things he needs to fix before it ever gets to the customer. When he passed by our table and asked what we thought, I invited him to pull up a chair. He did. And then we had a long delightful conversation about the wrinkles he’s putting a hot iron to. I loved talking with him, hearing his passion and sincerity. It was the best part of the meal!
There are many better bbq joints I could go to… but they all were start-ups at one point, too. My recommendation is to give Fat Toney’s a try. Order what you like and tell ‘em what you think. I believe this joint is going to get better with every plate they serve.
