An incredible and intimate dining experience. I am visiting from Texas and was recommended this omakase by a friend.

From beginning to end each dish left me elated and wondering what flavors are next?
Each dish was presented beautifully and alongside an explanation from the chef of why they chose the flavor profiles.

I am a glutton and at the end of the service I left satisfied with a full belly. Thank you Wa’z for the experience.

Absolutely fantastic upscale Japanese food. It’s a nice mix of sushi, Wagyu beef, and other traditional Japanese cuisine. Every dish was superbly executed and just delicious. The portions are plenty and they did a wonderful job accommodating my partner’s dietary restrictions.

Make reservations well in advance and don’t be late!

It was a great kaiseki experience. The food presentation and the tableware were incredibly beautiful and detailed, and you could really tell how much thought and care went into every dish. The dishes themselves were unique and not something you come across often, which made the experience interesting and fun.

That said, in terms of flavor, it did not quite meet my personal expectations, so that part was a bit disappointing. As someone who truly loves sushi, the sushi and sashimi were not my favorites, including the sushi rice. The okoge ankake was my least favorite dish. However, my friends really enjoyed the meal, and we still had a lovely dinner together. The service was excellent, and overall, it was a very good experience.

wa’z Seattle is a great place to experience Kaiseki with a distinct chef’s touch.

The flavor profile here is simple and direct, allowing diners to intuitively enjoy the taste. Even with minimal experience with Kaiseki, you will likely appreciate the food here. It is also a very enjoyable experience to watch the chefs prepare and serve the dishes right from the open kitchen counter.

However, the service leaves room for improvement. Our server forgot a few requests, and the slow start – we didn’t get served any dish until about 20-25 minutes after being seated, for a couple of times of my visits. Also, personally I didn’t quite enjoy their sushi (rice and rice seasoning more specifically)

Overall, while the culinary execution is approachable(not the price) and high-quality, the slow start and service hiccups distracted from what could have been a flawless experience.

The food has high quality, thoughtful craftsmanship, and all the details that make the experience special. This is also a Japanese restaurant actually operated by a Japanese chef, not by Chinese, Korean, or other ethnicities. There’s nothing wrong with the latter, but it can make the experience feel less authentic.
We paid $300 per person including sake pairings, tax, and tip, which is definitely not cheap and not really worth it compared to what you can get in Asia (or Vancouver or NYC). But we accept that this is a general Seattle problem.
While the service had some hiccups and definitely lacked the small customer-focused details you’d expect in fine dining and in Japanese culture, I also want to recognize that it’s a small restaurant with a limited number of staff. Everyone worked really hard, was clearly busy, and genuinely cared, so it still feels good to support them.
The only thing I didn’t love is the 20% service charge added before tax, which definitely makes the bill higher compared to the usual 20% tip.
Highly recommend reserve a seat at the counter top. the experience will not be worth it if you seat at the normal dining table.

It was beautiful inside, the staff were so informative and engaging, I loved hearing them describe each dish on the pre-fix menu. Each dish was delicious in its own right, and you could tell they enjoyed their work and did it well. I will definitely be going back for another special occasion, and look forward to seeing what other items the chef will pair together on future menus. Thank you so much for taking care of us on our anniversary, until we meet again!

They have namasake and shiro Koji sake! Very hard to find outside of Japan. Dry aged Tuna was also fantastic and the uni was not too strong. Was also happy to see Kinmadai (Golden eye Snapper) come out in one of the dishes. It’s one of my faves! They freshly grate the wasabi as well. Everything tastes so fresh and well balanced. Would eat here every month if I could.

We had a lovely family dinner for 8 people. We were impressed by the sake selection, the knowledgeable and courteous wait staff, and beautiful, clean, and thoughtful dinning room. Everyone in our party did the prefixed menu. I am diary free, and the restaurant graciously made accommodations for my dietary restrictions.

We visited wa’z for their June tasting menu. Everything was absolutely delicious from start to finish. The textures, mix of sweet, salty, spice, and aromatic flavors sent my senses to another world. Pair you meal with the sake tasting and it’s an absolutely incredible experience! 10/10 will go back!

My sister claims these are some of the best bites she’s had in her life. Standouts include the uni sesame tofu, Ikura corn puree, and Wagyu (perfectly done). We visited from NYC, where we have tried a few Wagyu restaurants, and were much more impressed by the quality demonstrated here
