This place has an updated Nordic mid century vibe. Decor is crisp and inviting. Staff we had were all attentive when engaged with us. We found it a little hard once our server got busy but Augustin was great. The menu reads great and for the most part the flavors make the mark but there were some misses. We enjoyed the ceviche with the asparagus powder in the crackers- fun- and the shrimp in the garlic sauce. Salads were fresh and crisp. The pork chop had good flavor and the risotto was great but the chop came out too raw close to the bone. The Loup de Mer branzino had a nice flavor but our dining partners had small bones throughout (to management credit they took it off the bill) Drinks we ok- the clarified air was very good but my martini felt weak and lacked flavor – except for the olive. Not sure why – the bartenders I’m sure are fantastic. Fo dessert the miso flan type offer was interesting and it could have had more depth and the carrot cake cheesecake combo was to me a 4/10. Not moist enough, the frosting lacked the buttery cream flavor that normally complements this well.As some places have changed over the years this newer entry is stlll worth a visit

Award winning restaurant design by top design firm Rockwell Group, our visit to Chasing Rabbits did not disappoint. This place has the full package, food is amazing, service was superb and the atmosphere like very few places you will visit.
We came here for dinner, here what we enjoyed for appetizers: serrano ham croquetas – pretty average, would not order again, Gamberetti in brodo- very tasteful but a bit spicy, Pulpo à la Feria- one of the best I have had, Kibbeh Nayeh- one of the favorites of the night (get it please!).
Then we also shared as main courses: Ora king Salmon- it was tasteful and we actually liked the most the puree it came with better than the salmon, cocoa coffee crusted skirt steak- another highlight of the night (just get it!).
For dessert we got the hazelnut gianduja crunch- it was very well balanced and delicious (not too sweet).
I will definitely recommend to friends and family, and will make sure to come on my next trip to Vail!
The venue also has an arcade- “Rabbit Hole”- kid friendly, as well as a speak-easy- “Moon Rabbit”.

We had an absolutely fantastic meal at Chasing Rabbits on 12/9/25. Manny was our waiter and was perfectly attentive, always available without being overbearing. He took great care of us. All of our drinks, starters, and entrees were out-of-this world, and we had a great time in the arcade afterwards. We’ll be back the next time we want a high-end meal in Vail.

The restaurant opens at 5pm. We weren’t allowed to be seated until the reservation at 5:15pm. The beef tartare and gnocchi appetizers were the table’s favorites. Bathrooms are confusing. At one point, I was directing people on where to go. Was offered a complimentary dessert, but never received one.

The Restaurant at Chasing Rabbits is one of the most enjoyable and unique dining experiences in Vail and should not be missed. Nothing else is quite like it. It is a physically complex establishment with multiple rooms, each very unique. This year we dined in the Library Lounge Room which is elegant and much quieter than the main dining room. We started with the Heirloom Carrot Gnocchi and Short Rib Cappelletti. These appetizer potions are tasting size, but rich with exquisite flavors. The 2 bone pork chop entree however was very generous and embellished with a fantastic Italian sausage risotto, creamed kale, and hazelnut-pear chutney. Simply wonderful. My son had the vegan oricchiette which he equally enjoyed. For dessert we shared a. Hazelnut- chocolate ganache that was rich and smooth.

The menu is complex and can be daunting at first but our server, Alex, knew the nuances of every item and gave us really valuable assistance in making great choices.

Noise level varies depending on the room you are seated in.

Our server, Victor, was very attentive and pleasant, and the additional support staff, particularly Nick, were on point. During our group’s visit to Chasing Rabbit in Vail, CO to play at their venue space, we embarked on a culinary journey that showcased the restaurant’s creative flair and commitment to quality. From inventive cocktails to refined appetizers and hearty entrées, each dish told a story of flavor, texture, and presentation.

The evening began with a round of cocktails that set the tone for the meal. While I enjoyed a local IPA from the tap, my wife enjoyed the ‘Beans to Nuts’ martini, rich and indulgent treat with a frothy top and deep espresso hue. Crafted with Moulin Vodka, espresso, Nux Alpina walnut, vanilla bean balsamic, and chocolate bitters, it offered a bold, dessert-like flavor profile perfect for coffee lovers.
Equally impressive our friend had the ‘Summer Dragon’—a visually stunning and refreshing drink served in a martini glass with a vibrant orange hue. Rimmed with a reddish-brown seasoning and garnished with a slice of dragon fruit, it featured Reyka Vodka, Italicus, lemon, dragon fruit syrup, and rose sage bitters. Bright and citrus-forward, it was the ideal summer cocktail.

To start, the ‘Serrano Ham Croquetas’ delivered a perfect balance of crispy and creamy textures. Golden and breaded, they were served atop a rich manchego fonduta and filled with Yukon potato and jamón serrano. Each croqueta was topped with Sturia Prestige caviar, adding a refined brininess that elevated the dish.
The ‘Spanish Ceviche’ was a vibrant and refreshing plate featuring diced cod marinated in lemon and garlic, mixed with avocado, cherry tomatoes, bell pepper, and olathe corn. Served with crisp rice crackers, it offered a satisfying contrast of textures and a bold, citrusy flavor.
Another standout was the ‘Crispy Pork Belly’—perfectly crisped on the outside and tender within. Garnished with pomegranate seeds, mint, coriander mostarda, lemon, and whipped labneh, it was a visually striking and flavorful small plate.
But to top off the small plates was the American Wagyu Crudo – an elegantly plated dish featuring thin slices of premium American Wagyu beef, served raw in a crudo style that highlights its delicate texture and rich flavor. Garnished with enoki mushrooms, black garlic, and sorrel, a drizzle of black vinegar adds acidity and depth, while Belper Knolle cheese shavings and horseradish provide a sharp, earthy contrast, and topped with Sturia Prestige caviar, the crudo is elevated with a touch of luxury and brininess.

Moving into the main courses, the ‘Moroccan Chicken Tagine’ brought bold North African flavors with a modern twist. Tender chicken seasoned with ras el hanout was served over saffron red lentils and accompanied by broccolini. Garnishes of dried apricot dukkah, marcona almonds, and spiced prune puree added layers of sweetness, crunch, and depth.
The ‘2 Bone Pork Chop’ was a hearty and satisfying entrée. Beautifully seared and served atop asparagus risotto, the dish was complemented by jamón-braised collard greens and finished with a Calabrian balsamic glaze. It balanced rustic comfort with refined technique, making it a highlight of the meal.

Chasing Rabbit delivered a memorable dining experience through its exceptional service, thoughtful presentation, bold flavors, and inventive pairings. Whether enjoying a cocktail, savoring a small plate, or indulging in a main course, each item reflected the restaurant’s dedication to culinary excellence.

The ambiance is amazing here. The Restaurant and The Library are so beautiful. The textures and lighting, provides a warm, comfortable atmosphere for the more formal (and expensive) menu.

We were not sure the food would live up to the decor, but it surprised all of us. The appetizer portions were a bit small but the flavors abundant.

We decided to share several mains. The portions, not a problem here.
The rabbit bolognese was magical. ✨ We were all fighting for the last bite.

Everything was perfectly cooked and flavorful.
The only negative would be the cocktails. We found them a bit over engineered and switched to wine for the main course.

The services cannot be forgotten. Attentive and helpful recommendations. We will be back.
