Creative menu, great drinks, and exceptional hospitality.

Came to Pargot on my first night in CDMX without particularly high expectations, and it ended up being one of the most memorable meals of the trip. Chef Alexis Ayala’s interpretation of Contemporary Mexican reflected a refined, “product-first” philosophy reminiscent of Californian cuisine. Essentially natural vibrancy of Mexican ingredients preserved and gently elevated rather than transformed beyond recognition. He’s not afraid to get weird with it (grasshopper XO sauce, cold clam stew), but instead of a crowded mess, every distinct ingredient was allowed to remain prominent and essential the final dish. My favorites of the evening were the Raw fish Kebbe, Clam stew, complimentary cornbread and butter, and the Sweet stuffed chili.

The Kebbe had a really interesting texture. Toasted grasshoppers mixed into the XO sauce added a brittle, shattering crunch, almost reminiscent of sekkoshi-style Korean sashimi, where the chew comes from delicate bone fragments. Clam Stew was a playful riff on chowder. Chocolate clams were meatier than what I’m used to in New England, and the broth carried subtle melon and sake notes. A scoop of corn-miso ice cream melted in slowly, which added a gentle sweetness and umami.

By the time the Sweet Stuffed Chili arrived, I had hit a wall. I managed exactly two bites before waving the white flag. One of the servers then swooped in to offer a digestif. I usually treat the whole ‘digestif’ concept like snake oil, but the Sotol (Flor del Desierto) he poured worked like magic. It instantly cut through the food coma and completely rewired my stance on after-dinner spirits.

It might fly under the radar for most visitors, but Pargot brings a unique, unapologetic point of view that the city’s more crowded hotspots are missing. Highly recommend giving them a try.

Without question, one of the best dining experiences I’ve had this year.

The menu was genuinely surprising, beautifully executed and introducing flavours I had never encountered before. A special mention goes to the octopus. It was visually striking (see pic) and exquisitely tender, it quite literally melted in the mouth. The rice pudding dessert was equally memorable, offering an impressive mix of textures and flavours and leaving me seriously tempted to order a second serving.

We paired the meal with a red wine, Quota29 from Salento in Italy, which complemented the dishes perfectly. From start to finish, everything was pure pleasure.

Service was impeccable, and the passion of the kitchen team was evident throughout. I loved every aspect of the experience at Pargot. Congratulations to the entire team.

Very lovely experience. This is fusion food so don’t expect traditional. Very creative. Lovely front of house staff. Their online reservation site messed up and booked us in for a time the restaurant wasn’t open and to make it up to us, they gave us a free meal at their sister restaurant plus very special treatment for when we rebooked at their restaurant. Very lovely flavours and I would go here again.

Pargot is one of those places that quietly gets everything right. The food is thoughtful, seasonal, and beautifully executed without feeling pretentious. Every dish feels intentional, with flavors that are balanced and comforting yet interesting.

The atmosphere is warm and relaxed—perfect for a long lunch or an easy dinner—and the service is attentive without hovering. It’s the kind of spot where you can taste the care that goes into the kitchen, from the ingredients to the presentation.

A standout in Roma Norte if you’re looking for elevated food in a laid-back setting. Definitely a place worth returning to.

It’s the perfect restaurant to treat yourself or celebrate a special occasion! If i ever come to Mexico City again, I know where to go.

I must admit, I’ve had some of the best food of my life here. My star dish was definitely the crab stew — simply unforgettable.

The opening appetizer, perfectly aligned with the seasonal festivities, was a skull-shaped sweet corn bread served with honey-infused butter they had specially prepared. Then came the duck dish, featuring a delightful mix of textures and just the right balance of sweet and sour flavors. I topped it all off with a chocolate-stuffed chili pepper, beautifully garnished with foamy white chocolate.

I can’t forget to mention their creative and delicious cocktails. I tried two: one made with a hint of horchata and kaffir lime for an amazing aroma, and another with nopal (cactus flower). Both were excellent, but the horchata-based one is a must-try if you’re looking for something truly unique and different from your usual cocktails.

Pargot unexpectedly exceed my expectations. The service was very attentive and the staff made sure that the table remained clean at all times. They were thorough to explain each dish and some origins as well as making sure each dish was presented beautifully. The food was a masterpiece and it almost felt wrong to dig in. Not to mention the wonderful and intentionally made ceramic plates each dish was served on. The music also seemed unfitting of the vibe of the restaurant as it gave more essence of a club but nonetheless it was enjoyable for me. My only gripe was that the plates took an absurd amount of time (30mins + per dish) so we ended up ordering less so we could finish within 3 hours.

Elegant room and the best service we have had in Mexico City (which is saying a lot, because service is often great here). But come for the food: wonderful flavors, inventive dishes, and wildly creative presentation. Chef Alexis Ayala greeted us personally and made us feel quite at home.

This was the most incredible dining experience we had in CDMX. Obviously delicious food is ubiquitous in this city, but the flavor combinations, attention to detail, impeccable service, and warm atmosphere truly made this stand out above the rest. I’m not sure if they have a Michelin star but they truly deserve one. The drinks were incredible and so smooth, leaving both me and my fiancé to ooh and ahhh over them. We had the croquettes, crab tostada, butternut squash, and suadero beef all of which were delightful and had us raving. They were also SO attentive and there was an open kitchen so you could see just how meticulous the head chef was, who also took the time to chat to everyone table which I thought was a great representation of just how thoughtful and intentional this place is. Go here !!!!!

Side note – I’m used to American portion sizes so I was a bit nervous but 5 dishes really did make us feel full as they suggested 🙂
