Have been living in Pueblo West for over 20 years and never had an opportunity to eat at Adam’s Ribs. We came in without expectations, but l enjoyed our early dinner. We both had burgers. They were good. I especially loved the really crispy bacon in mine. Had a big portion of curly price too. Our server was friendly and attentive.

Pretty decent BBQ joint. Young staff, seemed undermanned and over worked. The food was pretty decent, although I’m not sure, but their smoke flavor tastes like the liquid smoke a lot of places use. The cherry cobler was on point though! Had that great home made taste, almost as buttery as mom used to make it. The server forgot some stuff here and there, but I can’t blame him on account of how busy he was.
If you’re near by and hungry, make it a point to stop in and eat some good food!

Hands down the best BBQ I’ve had in Pueblo Colorado !!! My second time in and it was absolutely amazing !!! I had the Babyback ribs,spare ribs,brisket,slice pork,Mac cheese,cut beans,baked beans,potato salad,toast pickle and orange slices with a cinnamon roll and everything was absolutely delicious the ribs were so tender bones pulled right out !! I will return for something different !!!

The staff here is very friendly and chatty and the service was quick and thorough. The decor is a lot of fun and gives it a local feel; they also have a TV for sports watchers. The food was pretty good. They unfortunately aren’t able to serve alcohol at this time.

Ordered takeout today and was a little surprised to find that my half rack of ribs was actually a half rack sawed in half. The plate was 15.99, and all of the sides besides the potato salad came in less than 3oz cups normally used for condiments. The BBQ was was overcooked, tough, and flavorless. The Veggie sandwich we ordered for a friend was Kraft singles with lettuce and few tomato slices, for $10.99. Just overall really disappointed, we were hoping to support a local business but won’t be back.

This was our first time eating here. The wait staff here is really nice and very friendly. I ordered the combo plate with potato salad and okra. The meat was served almost at room temperature…a little warm. The ribs were good. Very juicy. The meat didnt fall off the rib, but with a small tug it did. The brisket and pork slices were very very thin and didnt taste very fresh. I was reminded of spaghetti-o’s when I tasted the bbq sauce. The potato salad was very bland. Maybe more mustard is needed? The okra was good and served very hot. The toast that came with the plate was toasted perfectly. I would go back, but would not order the brisket or pork.

I wasn’t very happy with the food here. It had a gas and smoke flavor to it. The food tasted pre-cooked and then smoked. I noticed they have a small gas smoker in the kitchen. The food is definitely not slow cooked in a smoker like one would think. The ribs were more fat and gristle than meat, the chicken was ok, a bit rubbery. The brisket was dry and was not the “Melt in your mouth” that they advertise. With most Smoke house / Rib houses I have been to, the Bbq sauces were on the table, not put on your food for you. Lunch was pricey for the quality and serving size. Dine at your own risk. If you have never had smoke house / Rib shack food before then you may like it.
