Pilot Project Brewing is a brewery incubator and restaurant located in the Brewery District of Milwaukee, Wisconsin. We have beer, food, liquor, wine, and brewery tours on the weekends. We serve Sunday brunch with a full bloody mary bar, bottomless mimosas and espresso martinis. Pilot Project serves as a hub for innovation and experimentation across the brewing industry.

Stopped for a drink before a game and was pleasantly surprised at the beautiful inside. It was a 10-minute walk to Baird Center and the center of downtown. But parking is paid parking on the street, with spots hard to find.
Once the parking situation is resolved, things are great. The vibes inside was awesome – very open, with lots of seating. There seems to be tons of seating options, and outdoor seating as well for when the days are warmer.
And for a brewery, the most important thing? The beer, of course! And it was good. We’ve had their beer before and have always like them. It was great getting some more on draft.

Cheese curds $14
These were delicious, but it did get salty after munching through the plate. We were limiting ourselves to just one drink, and needed more drinks or another food item to mediate our tastebuds. I’d order again with a proper meal or with more booze.
Service was super nice, though not quite polished, which I don’t mind at all. Points for a nice smile!

What an awesome find in downtown Milwaukee!! Went with a group and took the tour – such a fun experience!! Our tour guide, Bob was friendly, knowledgeable & just exuded a great energy. We were able to try several different kinds of beverages – all of them super unique. The brewery itself was really interesting, but it’s also a bar/restaurant with an additional rooftop bar which really rounded out the experience. The views from up there were incredible! Paired with some great food & drink and nearing sunset – was just a really great vibe!! Will definitely be back!

We hosted a welcome party here for out of town guests before my son’s wedding. From start to finish working with Kristi was fanstastic. She is easy to talk with, had great ideas, and did a good job of helping me plan without upselling. Our friends and family thoroughly enjoyed themselves. I highly recommend this venue.

Historical curb appeal meets modern tap room. The vibe is modern and relaxed, with historic views in the front and modern city digs in the back. We didn’t get a chance to experience the roof top patio, but will definitely be back to experience it. Huge plus as always: it’s dog friendly! The patio and front area inside are perfect for bringing the gang.
The drink selection is always changing in the best way — fun, creative brews that are actually good. The Strawberry White Pepper Margarita by Devious was the perfect summer cocktail. It’s just one of those places where you show up for a drink and end up staying way longer than you meant to (in the best way).

Good food and service. Manager Allen came to our table to see how things were. Waitress was very sweet. Smash burgers very good. Upstairs patio very large. Bartender up on patio only had one guest and didn’t greet us however or let us know how or where to order. So maybe lil improving needed there but overall will definitely come back. Hostess was polite also. Good beer selections as well.

Blimey! I popped into Pilot Project Brewing in Milwaukee for a spot of grub and a pint, and it was a cracking good time . The Italian street food was spot on , and the craft beers were bloody lovely . The rooftop bar had some fantastic views of the city , and it was a top spot to chill with mates .
The atmosphere was quite relaxed and welcoming, innit? The staff were friendly and attentive, and I felt right at home . The only reason I’m not giving it a full 5 stars is that the food could do with a bit more authenticity , but all in all, it’s a top spot to visit .
If you’re in Milwaukee and looking for a place to grab a bite and a pint, Pilot Project Brewing is a cracking good choice . Give it a go, mate! Cheers!

We took a tour and tried too many brewers. After it we had dinner in the restaurant. The food was great, and drinks were better. We hang out in the rooftop for a while expending all day long there.
I really enjoy this place and planning on coming back soon with some other friends that I am pretty sure will love it.

This place is very large. Has a nice beer selection and the food was great. Mac and cheese was the best my wife and kid have had. I liked my wings and the flight I had was great. They had board games and a huge back room with bags and ping pong. The patio is huge and looks like it would be amazing in the summer

We just had our wedding celebration this past weekend. Could not have asked for the day/night to go any better than it did. Kristi from Pilot project was amazing!! Could not say enough good things about her-everything from being responsive leading up to the day and being very present during the day and night. My husband and I love tacos and despite them not actually being on the menu- they made it happen! And they were delicious. Our guests gave so many compliments about the food. Lastly, the bartenders were great!! Highly recommend pilot project for big events.
