I stopped by the Oyster Bar in Las Vegas while visiting from New York, and it was easily one of the highlights of my trip. The atmosphere was lively and welcoming, and the freshness and quality of the seafood were outstanding.

A special thank you to my server, Simon, who was attentive, knowledgeable, and made the entire experience seamless from start to finish. The chefs, Simon and Kobe, truly elevated the meal every dish was prepared to perfection, beautifully presented, and packed with flavor.

From the oysters to the hot dishes, everything tasted incredibly fresh and thoughtfully prepared. You can tell this team takes pride in what they do.

If you’re in Las Vegas and love great seafood with exceptional service, this spot is a must-visit. I’ll absolutely be back next time I’m in town.

The food here was really good. One of the best Clam Chowder I have had in a very long time. The chowder is served with crackers and there are a lot of hot sauce options to play around with. Along with the clam chowder, we ordered the Durango Pan Roast, and the Bouillabaisse. The Pan Roast was absolutely delicious. The thick creamy tomato base is complimented well with the seafood, chicken, sausage and the rice. The Bouillabaisse on the other hand is a mucher lighter and thinner stew which helps to enhance the taste lobster and other seafoods. Most of the dishes have a heat level that you can select between 1 to 10. They serve complimentary bread at the start of the meal. The seating is bar style seating arrangement and you can see the chefs preparing your meals. I have always heard there are long wait times but we went on a Saturday afternoon and we just had to wait for about 15 minutes but that may vary. Overall a great experience.

The Best Oyster Bar Pan Roast – Worth the Wait!
​This was my second visit, and I can officially confirm this place is fantastic! The first time I tried the Gumbo, which was rich and flavorful. This time, I finally tried their famous Pan Roast, and it truly is an experience unique to this spot.
​ ️ Food & Experience: A Perfect 10
​The food is incredibly fresh, and I love the energy of watching the chefs cook your meal right in front of you. The Pan Roast was pure comfort food—creamy, perfectly seasoned, and loaded with fresh seafood. I can absolutely see why people consistently stand in line here.
​⏳ A Note on the Wait
​Be prepared for a line! The wait is truly hit or miss—sometimes you get lucky with just a few people ahead of you, and other times it can be over an hour.
​But here’s the key takeaway: Even with a long wait, it is worth every minute. People are standing in line at 3:00 AM for a reason! It’s open 24 hours, so do yourself a favor and just try it. You won’t regret it.

I just finished my dish so I don’t have any pictures, but you should definitely give this place a try. If you’re a noodle person, you can choose noodles instead of rice, and they make it fresh right in front of you. The servers and chefs are super friendly, and the food comes out hot and delicious — highly recommended. The people sitting next to me said this is one of the best spots to come out of Las Vegas, and I totally agree!

We’ve been wanting to go here for the longest time and sadly had one of the worst experience from a restaurant visit

Waited about an hour to be seated, manager already been acting weird and kind of rude to everyone maybe because it’s later in the day or he’s having a bad day, tired or something.

we ordered a bowl of chowder and the combination pan roast,
after about 10 minutes food arrived

Sadly there were a piece of hair in the pan roast, we noticed before the first bite, its not a big deal things happened but the manager/waiter reaction when being asked about it he said it wasn’t a hair that it was grease and he stir the food so we cant see the hair anymore, and as we start to eat it guess what? It was a piece of long black hair…

we’re beyond disgusted and disappointed, they made us a new one yet the manager kept making comments like it wasn’t his hair and so on, the thing is we already made him aware before even eating it, could’ve been handled better

Well, anyway the
Clam chowder is 10/10

The pan roast is not to our taste, its very sweet rather than savory 6/10 but maybe better for someone else

Not coming back to this location, very disappointed.

The hype is real. Is as good as the oyster bar at Palace station.

Instead of ordering my usual pan roast tried their garlic shrimp. It’s so good – the sauce is amazing. Also tried an off menu item- dirty chowder- yum!!!

Yes still busy with long lines especially during peak hours. Service is always great

By far the best oyster bar in Vegas. And I only like to go to Bryan because he makes the food perfectly and it’s worth the money that you pay for. We usually get house gumbo, clam chowder, bbq shrimp , pan roast and bouilla base. We tried the Étouffée and the shrimp scampi. Love that it’s open late for the late nights. Worth every bit of the wait.

Service is great; surprisingly, they operate 24 hours.
Coming just for the oyster, adding a bit of creamy crab pan roast. Their oyster is fresh at least, but I personally would like to add fresh red wine vinegar with sliced shallots instead of pico-style sauce. Their oyster is bulky but not creamy as expected.
Crab meat roast is okay, but less oily would be great.
Their open kitchen allows you to communicate and adjust your food style by talking to the cook directly, like a bistro.
The waiting time is always over 30-60 mins at minimum cost, which deters some customers away.

My fiancé and I were visiting Las Vegas from Atlanta on business and stayed at Durango Casino & Resort. Two nights ago, we had dinner at the Oyster Bar, and it was hands down one of the best experiences of our trip.

Chef William and Chef Bobby were absolutely phenomenal. You could tell Chef Bobby was completely in his element. Chef William seemed to be everywhere helping cook, busing tables, assisting guests in line, supporting the servers, and checking in with people at the bar.

When we asked Chef William what his role was, he said his job was to take care of his staff and his guests and it truly showed. That level of leadership and care does not go unnoticed.

Our server Grace was phenomenal as well and made the evening even more enjoyable.

We will definitely be back and will be recommending this place to friends. Thank you for making our Vegas trip spectacular!

An absolutely unforgettable dish, Pan Roast stole my heart! There was about a 15 minute wait for our party of five to be seated. At first, I thought we were going to be split up, but somehow, the team at Oyster Bar managed to get us all seated together!

I ordered the Pan Roast, which is an absolute must. This rich, tomato-based stew is creamy, savory, and packed with flavor. I got the Combination (shrimp, crab, and lobster) with added sausage, because that extra bit of umami took the dish to the next level.

We also ordered the clam chowder, which was perfect. It was thick, creamy, and especially hearty. The steamed clams were delicious, and the bread provided was perfect for dipping into the broth. We asked for more bread, and they delivered, definitely not skimping on the extras.

The Pan Roast portion is HUGE. I saw most people occupying two seats and sharing one order of the Pan Roast, so it’s a good idea to split it if you want to try multiple dishes. We also got the jambalaya, which, while good, was overshadowed by the glistening Pan Roast. All the dishes were made to order and cooked right in front of us, and everything arrived piping hot, just the way I like it.
