Borderline Cafe is one of those places that quietly surprises you with how good the food actually is.
The veggie pizza was loaded and generous, a perfectly baked crust topped with melty cheese, fresh mushrooms, olives, onions, green peppers, tomatoes, and jalapeños. Everything tasted fresh, well-balanced, and comforting without feeling heavy. The veggies weren’t soggy, the cheese had a great golden finish, and every bite delivered.
The quesadilla was just as impressive, crispy on the outside, packed with tender meat, gooey cheese, and flavorful peppers. Simple, satisfying, and done right. Pairing it with Valentina hot sauce was the perfect touch and added just the right kick.
The vibe is casual and unpretentious, the portions are solid, and the food feels like classic comfort done with care. If you’re looking for a relaxed spot with dependable, tasty food .Borderline Cafe is absolutely worth stopping at.

OK, New Mexico burger restaurants, the bar has just been raised! Borderland Café in Columbus, New Mexico takes the 2026 prize for best green chili cheeseburger in the state with their Pancho burger served with enchilada fries. The Pancho burger combines the finest beef, green chili, garnishes, and Mennonite cheese to satisfy from the first bite to the last. Sparky’s was good, Buckhorn was delicious, Foster’s Hotel was fantastic , but the Pancho burger beats them all. Even if you don’t like burgers, the enchilada fries are totally worth the drive down to Columbus. Well done, Borderland Café!

It’s a green enchilada sauce, and was almost too hot for me, the steak quesadilla was delicious.
My wife had the regular Chicken sandwich, (crispy), combo with the enchilada fries .
Needless to say that they were way too hot for her. It was our first time there, if we stop again we will probably try the pizza .
The gals, (ladies), working were fantastic, very polite and great service.
For a little town Cafe it was a great little place to get off the road and enjoy a meal, if you are not sure about the spicy sauce, I’m sure that they would give you a little sample before you order your meal. I wish I would have thought of that before my wife ordered.
They had the music a little loud for us, but we were also sitting under a speaker. We asked if they could turn the music down some and she took care of it right away, after that it was nice.

Super cute place in Columbus, NM. They have wifi and plenty of workspace, drinks, snacks. Outside, shaded area and playground for kids.
not a lot of healthy, fresh homemade options. Not a lot of vegetarian/vegan protein options. However, friends that had the burgers and chicken quesadilla were satisfied. Service was great, very accomodating and reasonable prices. i had 4 eggs and hashbrowns. Hashbrowns were not homemade. i would go back for the wifi and, also, to try the iced coffee

Fast Great Food !! Had the Bacon cheese Burger with Mennonite cheese and green chili on my fries. It was almost like a Chico’s tacos, but with green chili sauce, and it was delicious. Green chili was spicy but not overbearing. The mennontie cheese was fire!! Overall, five-star!! Come check them out!!

We come to Borderland Cafe quite regularly from Deming (30 minutes away) as it is one of our favorite lunch spots. Today was our first visit since they remodeled and updated the menu. We are happy to say the food is still great, and the interior even better. Great food, great service, and a great small town New Mexico atmosphere. Definitely stop by when passing through or when you feel like taking a drive from Deming or Rockhound SP.
