Menya Hanabi is the original pioneers of Mazesoba, also known as Mazemen, in Japan. We specialize in Japanese “dry” ramen layered with chives, green onion, and seaweed topped off with our specialty spicy ground pork that sits in a saucy base. We are the third wave of ramen (after traditional soup ramen and tsukemen) which has become increasingly popular all over the world. We have over 35 locations worldwide!

Taiwanese-style soupless ramen, customized with sides & toppings served from an open-kitchen bar.

Deluxe mazemen – 4.25 stars
Great bonito-based flavour with umami like a tonkotsu ramen. Too salty though.

Curry mazemen – 4 stars
Appreciated that this was less salty, with a curry flavour less sweet than the usual Japanese curry too. On the milder side.

The service is excellent for such a crowded restaurant. Servers move efficiently through tight spaces and have great memory. The food is also fresh, the broth is a little on the salty side but fine for me. If you are from the bay area peninsula, think Kajiken.

This noodle place has simple menu and very tasty food. I ordered their deluxe Nagoya mazesoba noodle and homemade matcha. Every bite made me wanting more.

Been swinging by this spot more often lately—especially with the hotter weather, I’ve been seriously craving their noodles. It had been a while since my last visit, but I’m glad I came back.

You order through a QR code at the table, and my go-to is the Deluxe Mazemen—basically a dry Japanese noodle bowl loaded with toppings. The flavors are deep, rich, and full of umami. It can get a little heavy, but that’s where the vinegar comes in—just add a splash to balance it out.

The chashu pork in the deluxe is tender and flavorful, and the noodles are always cooked just right. Once you finish most of your noodles, you can ask for a free scoop of rice to mix with the leftover toppings—a perfect way to round out the meal. Lately, I’ve also been enjoying their broth (I think it’s chicken and pork based)—a warm, comforting finish after all that richness.

Solid spot, definitely worth checking out if you’re craving something savory and satisfying.

Credit where credit is due, the food is really good. Everything fried was really crispy. The Karaage had a crispy crust, but the actual meat was juicy. The noodles aren’t ramen with soup, but they tend to specialize in more Tsukemen style noodles (gravy, instead of broth). Staff was professional in front of you at least. Personally, I’m not a fan of the decor, but I’m sure there are people that will like it.

This restaurant is very popular and the line can get very long. We were really hyped before going to this restaurant as we read the reviews which were kind of disappointed as we eat the noodles. I personally tried their specialty and also the fried chicken but I couldn’t really enjoy them both.
The noodles is full of raw onions which somewhat took over the bowl as it was the only thing that I taste when I eat the noodle. Giving the fact that I am a big fan of onions in general, this bowl is not for me which was sad. I would suggest the owner to switch to spicy sweet and sour dipping sauce for the fried chicken, not mayonnaise as the chicken is missing the salty and sweet flavor and it tastes super bland…
Though, the customer service is decent and the atmosphere is fine. Maybe it was me and my family were being picky but we all did not like it and this was our first time trying ramen this style with no broth. But you should try it once to see if it fits your taste.

This is a franchise that fails the original Nagoya Mazesoba. The quality of the food isn’t there. It tasted very different from other Mazesoba I’ve had. The atmosphere was even worse. Dining area was not comfortable. The place was lack of character. Tables were set too close to each other. You can actually get sprayed by some Chinese guys slurping next to you. This is more like a Chinese restaurant, not Japanese.

Been coming here every few months since this place has opened and it still doesn’t disappoint. Love their style of noodles called mazesoba which is served without broth or soup unless you order it as a side. Depending on who you ask, the noodles originated from Nagoya, Japan and uses Taiwanese style minced meat as the main ingredient for its signature bowl. It’s all very delicious and the reason why it might be hard to get a seat on the weekend. Cool thing is they give you a small scoop of rice when you are almost done with your meal so that you can mix it in with whatever sauce you have leftover. It’s filling and, to be honest, a little fun mixing it in. Love this place and will come back for more because there aren’t too many places like this around.

The best mazesoba so far! Their matcha latte is also good. It can get crowded during lunch and on weekends.

Mazesoba is definitely the highlight of the restaurant. We tried a few different variations, and all were unique and flavorful. The regular ramen is decent, but not particularly standout. Note: The mochi noodles taste the same as the mazesoba noodles…
