Yesterday I dined at Penn to Paper with a few of my colleagues. It was all of our first times as we traveled into Dallas from other places as far as California, Seattle, Chicago, and Houston. We were all absolutely delighted at how friendly the staff was and how incredible the food was. Their quality of product, flavor profile, and quantity were unprecedented. I would also like to add that their drinks were absolutely top-notch. If you were ever in the area, I would highly recommend this establishment for lunch or dinner.

Today, 9/3/2025, was my first time eating at Penn to Paper in Midlothian. The day before coming, I looked at their menu online. I wanted The Big “D” Smash Burger, but some of the pictures and comments I saw people post on certain review websites made it seem like the burger would be dry.
It’s been a while since I ate a burger from a restaurant, and I was really craving one. So I prayed and asked Jesus to give me the right cook to make my burger the way I wanted. When I finally got to the restaurant the next day, I specified that I didn’t want my burger flat and I wanted my meat well done. My burger came out great! It was so tall that I struggled to fit it into my mouth. The meat was well done and not dry. The pickles, onions, cheese, and sauce were wonderful. The cook did a great job, and Jesus for sure hooked me up!
The fries were an extra cost and they were bland. Even though they were sprinkled with seasoning, I hardly tasted it. I added a picture of the 2 meat plate of brisket and sausage that I ordered to-go for my sister. Also, my mother had ordered the salmon tacos, and she enjoyed them. The salmon was chopped into small pieces and sat atop some cole slaw. The amount of salmon for each taco was very generous. The salmon practically filled the plate and spilled out of the tacos. The order comes with three tacos, but they’re kinda small. If you’re hungry, I’d suggest you add a side with them. They also offer desserts and have a separate menu for them, so be sure to ask about it.
Overall, the food, the ambiance, the staff, and the lemonade I ordered were all great.
Update: 9/27/2025
I returned to Penn to Paper to try the Smokin Cuban sandwich. Its presentation was a 10/10, texture was a 10/10 (love the hoagie bread), but the taste was a 5/10 because either the pickles or the mustard was too strong in my particular sandwich. Also, I expected the cheese to be melted but it wasn’t. The pulled pork and brisket were good, but they could’ve use some seasoning. I think people should still try the sandwich, though. Perhaps mine was just off today.

Here for a business lunch and boy was I impressed from the walk up to the decor. The vibe is upscale but the prices don’t say that. The portions are perfect. The menu looks great, not too many random options. It seems like what they do, they do well. Perfect spot for a date night, lunch and a few drinks. I will most definitely be back.

Cons:
The Fish Tacos as an entree were a bit small, and had mediocre flavor
The Old Fashioned was missing the orange peel, the cherry, and seemed to have overpowered bitters
Overall I would return, to try the other entrees and the smoked wings again

Well if anyone has ever read any of my reviews, they knew that one of my biggest peeves is bad service. Our waitress refilled our drinks all of one time. And we had to get another waitress to tell her we needed refills. As for the food. Well usually when when the prices are high, the food is worth the price. But not in this case. I ordered the half pound brisket plate and apparently they ran out of flavor in the kitchen. And the onions and pickles were stale, like really chewy. My wife ordered the pork chop and while that was pretty good, we later found out ir was $20 and the mashed potatoes was not included in the price. Really? 20 bucks for a single pork chop with no sides. Wow! To say that this place was a total disappointment would be an understatement. I love Midlothian and have been a proud resident for quite some time now and believe me there are some mighty fine eateries but this place was a total bust. And the prices are ridiculous for what they bring to the table. I’d give them two enthusiastic thumbs down and would not recommend Pen to paper to anyone.

This place is such a jewel. I had lunch at Pen to Paper yesterday, and I was completely blown away. It was one of those rare dining experiences where everything is simply perfect. The decor is a beautiful blend of cozy and elegant, creating a warm and inviting atmosphere from the moment you walk in. The service was impeccable—friendly, attentive, and present right when you needed them, but never pushy.
The real star, of course, was the food. I wasn’t even that hungry, so I ordered the brisket stuffed taco with the intention of taking half home. That plan failed completely because it was so incredibly delicious I couldn’t stop myself from finishing the entire thing. For the outstanding quality of the meal, the prices are more than fair.
While I had a long drive and didn’t drink, I couldn’t help but notice their amazing selection of bourbon and tequila. They clearly have a serious cocktail program. I cannot recommend Pen to Paper enough and I am already planning my next trip back to Midlothian just to eat here again (and try a cocktail!).

Would not recommend. I came for dinner with my wife, we had a reservation and got seated quickly. We ordered drinks which took 10 minutes to arrive, it was busy so we understood but not ideal. Ordered appetizers and they came out cold. The food was okay not worth the pricing, took about 45 minutes to come out. The brisket was dry and flavorless and my wifes salad was drowning in dressing where she couldn’t eat it. Staff was friendly but we waited for refills and was not checked on enough, server seemed annoyed when we would ask for things. We were never checked on by a manager or we would’ve mentioned how we were unhappy. Ive heard mixed reviews and wanted to try it out, to say we were disappointed is an understatement. If you’re looking to spend a lot of money for good quality service and food this is not the place to go.

I don’t leave many reviews but had to after going back for the 3rd time in a couple weeks. This place is AMAZING!! The overall vibe and flavorful food is rare in Ellis County. The fire bomb dip with chips as a starter is incredible. We’ve had the smash burger, crunchy pig, chicken pesto sandwich, and pork chop. Everything is loaded with flavor! Can’t wait to come back and try something new. Highly recommend.

We stopped by Penn to Paper around 2:00 PM on January 31 2026 because my wife and I were craving barbecue and they were close by. I’m not sure if we came at the wrong time or if they were just having an off day, but the experience didn’t quite live up to what we were hoping for. I ordered the barbecue sampler, and my wife got the loaded potato. Not trying to be harsh, but both dishes felt pretty basic, and unfortunately the food came out a little cold on both plates. The meats also seemed to be lacking seasoning and flavor. I had the sausage and burnt ends some pieces were cooked well, while others were tough, which was disappointing. What really sucks is that the staff was genuinely very nice, and I really wanted to enjoy this place. On a positive note, we ordered the fried pickles as an appetizer and those were amazing hot, fresh, and easily the highlight of our visit. Overall, I’d give it about a 3.5 out of 5. We probably won’t be coming back anytime soon, but we may consider giving it another shot in the future, hoping it was just an off day.
