We had a very good experience at Hill Country DC. I loved the Texas themed decorations and the informal service, cafeteria style. We had an excellent, melt-in-your-mouth, moist brisket, with chile and Mac & cheese, and home Made lemonade that was really good, not topo sweet. It was a shame that the Line dancing night was cancelled, but the staff was very helpful and best over heels to find a solution and refund me the amount that I had already paid for it. final bill was 54$. Highly recommended.

I love going to this place every time I’m in DC. The barbecue is great, no matter what meal you get. It is a rustic atmosphere, so expect that. Service is sometimes good and sometimes slow. Ordering is from the counter. Once you go there the first time, you understand how that works and there’s no surprises. Just good food. I love every one of their sides as well as the brisket the pulled pork and everything else I’ve tried. This is a no lose proposition!

Great experience at Hill Country in Washington DC.

I have visited the one in New York City and enjoy my experience there.

Lots of space the main area. There is also some bar seating as well.

After entering the restaurant, you go toward the back area to get your food. You can choose your meats and sides there. I decided to go with the two meats, two sides and cornbread muffin combo ($32). I got the brisket, smoked turkey, collards and chili.

You can then take your food and sit where you want. There is a server there to assist with your drinks there, including alcoholic drinks. (Beers were $7)

Everything was very good. The brisket and collards stood out…as did the cornbread muffins. I also particularly liked their signature sauce which was available at each table.

The drink server, food station servers and hostesses were all very nice.

I went here with friends and I am convinced this is the best BBQ I’ve had. I had the moist brisket and hot sausage with mac & cheese and baked beans with burnt ends. It came with jalapeńo cornbread and and honey pepper butter. Everything was made in-house. The brisket was so good it melted in my mouth and it paired well with their BBQ sauce. The sausage had a mild heat but was tasty. It suprisingly paired well with their hogwash sauce (a vinegar dipping sauce). The mac & cheese was cheesy, gooey and oh so good! The baked beans were good as well complimented by the burnt ends. The unlimited homemade lemonade was a nice thirst quencher. For the money, you get a nice and filling meal and I will be back for more if I get a BBQ fix!

Went here with some new friends tonight! It was a great place for a large group because there’s tons of seating. I had the brisket sandwich, which was great. Tons of meat and the option to add onions, pickled onions, and pickles. The sandwich comes with one side (I chose mac and cheese, which I didn’t love). I would say the meat was better than any of the sides I tried. The baked beans were just okay, and needed more flavor. The mac and cheese was …. interesting. Some people my group flat out hated it, while I thought it was just okay. Nothing to write home about. Collard greens were good, and the sausage was too. Overall a fun spot with nice servers, quick service, and great barbecue.

If you’re in downtown Washington DC and craving some authentic Texas BBQ, then the cafeteria-style approach to ordering your meats and sides at this restaurant is definitely worth a visit. The restaurant feels like tables set in an old barn, giving it a downhome feel, and the staff serving food are friendly and efficient, making the overall experience a pleasant one.

While the table service can be a bit slow at times, the quality of the food more than makes up for it. The pulled pork was well smoked, and the brisket was melt-in-your-mouth delicious. You could tell that the meats were cooked to perfection and with great care. However, the same can not be said for the sides. The cornbread was not a standout, and the coleslaw and beans were decent at best.

Overall, if you’re looking for a satisfying and hearty BBQ meal, this restaurant is definitely worth a visit. The cafeteria-style approach to ordering your meats and sides gives you the opportunity to pick and choose exactly what you want, and the staff serving food are friendly and efficient. While the table service could be improved, the quality of the meats is exceptional and definitely worth trying. The ambiance of the restaurant is rustic and homey, adding to the overall experience.

I grew up in Texas and still remember the salsa commercial with the lines “New York City! Get a rope!” I always approach BBQ outside of Texas with the same attitude. This experience made me rethink that notion!
The pitmasters are lively (reminds me of home). The pork belly melts in your mouth, The swine sauce has a mustardy kick. The brisket is moist and has a great smoke ring. The dirty rice has a great balance of flavor and ground meat. The baked beans have huge chunks of meat in them. Finally, the peanut butter cookie is moist and delicious. They even have plain ole white bread to boot!
The decor reminds me of some of the iconic BBQ places back in the Hill Country towns of Lockhart and Rockdale. This definitely took me home to Texas for an hour. Thanks!

My only complaint, if you can call it that, is that the brisket was sliced a little thick.

Went here for my birthday, on the weekend. Lucked out that it wasn’t too busy. But had the chicken wings, moist brisket, beef short rib, chicken, sausage and pork ribs!
The dry rub seasoning for the bark of the moist beef brisket was impeccable as well as perfectly balanced. Also, the moist brisket was cooked exceptionally well with the exact amount of fat and meat. The beef short rib was also nice and juicy, a little bit drier than the moist brisket. The mac n cheese was solid as was the baked beans with brunt ends mixed in. Cornbread was decent. The must try dessert, is hands down the banana pudding, not too sweet or overwhelming! Overall great experience. The manager, Daniel, provided outstanding customer service as well!

The meat was delicious, we ordered pulled pork and beef brisket. Both were moist and tender. Cheesy potatoes were good as well. Beans were also good. The food is served cafeteria style and the guys that were serving it were having a great time and were funny and awesome to talk to. The vibe inside Hill Country is Texas country with wood floors and walls, long tables and chairs and also smaller tables for smaller groups. We did see several large groups while here and they were able to all sit at the same long table. I would definitely recommend this place if you like bbq and would definitely eat here again

That moist and juicy brisket; mmmmh-mmh! It’s nice having an institution like this so close to the National Mall to enjoy a delicious Texas barbecue or “BBQ.”

I had the sliced brisket, and pulled pork, and not sausage, which was perfectly smoked in time for my afternoon visit.

I also had side orders of cucumber salad, cole slaw, and mac and cheese, along with pickled onion and sliced pickles.

The shiner on tap hit the spot on a hot day.

The seating in the bar area was plentiful at lunch time. I like the service model here; you go to the back to order and pick up your food, and carry it back to you table on a tray. They bring you your drink order to your table if you want. I ordered my beer and water directly from the bartender and tipped him out for that when I paid my check.

The place had decent wheelchair accessibility with a ramp with a gentle rise into the seating area, and an elevator to go downstairs to the concert area and restrooms.

They don’t accept any cash, which is a reversible misfortune, because the cash money in this county is supposed to be legal tender for ALL debts, both public AND private.
