Best barbecue along the Mississippi River Scenic Byway in Kentucky. With three locations serving the Great River Region, Kentucky Hillbilly Barbecue has the bases covered for delicious smoked pork, beef, and chicken. While the pulled pork is great, I’ve had to rein myself in from eating their chicken nachos and ribs multiple times a week. These dishes are addictive!

Today, I had the most delicious brisket I have ever eaten, with the perfect mix of slow-cooked beef, mouth-watering fat cap, and that lovely char that only brisket can produce. Kentucky Hillbilly BBQ, with newly opened locations in Bardwell and Wickliffe, KY, also offers barbecued pork, chicken, ribs, ham and stick bologna, and custom cooking. So far, I have only had their brisket sandwich ($4.50), but Kentucky Hillbilly easily earns five stars: on my scorecard, if a restaurant (or in this case, a food truck) gets the brisket right, everything else falls into place. Open daily 10 a.m. – 6 p.m.
