The food was terrible. The meats were excessively greasy and completely overcooked or undercooked compared to what we ordered — for example, we asked for well done and it came almost raw. The kids’ meal was even worse: the fries were burnt and the chicken tenders were very dry, clearly looking like they had been refried and reused.
The service was also very poor. The servers were arrogant and not attentive, which made the experience even more unpleasant.
On top of that, the environment does not match what the restaurant claims to be. The chairs were old, dirty, and peeling, showing a lack of care for the space.
The only acceptable item was the Caesar salad — probably because lettuce and dressing are hard to mess up.
Overall, a terrible place and I would not recommend it.
We stopped in Saturday night before an early flight the next morning. Had a reservation. Gave it up so the team could seat some walk-in guests. Small gesture. Completely worth it.
The bar is the great in its own right.
My fiancée ordered a Cosmo. I went with the dirty gin martini. Both were sublime. Cold, clean, and crafted with intention. That martini alone earns five stars.
The food matched the drinks. I had the prime ribeye sandwich — outstanding. She had the loaded wedge — loved every bite. Simple choices. Executed perfectly. That’s the mark of a great kitchen.
The service was what good hospitality looks like. Timely. No pressure. Completely on-point. Our server read the room, gave us space, and was there when we needed them. That’s harder to do than most people realize.
Gibson’s isn’t trying to impress you. It already has. The atmosphere is warm, the energy is right, and the people clearly take pride in what they do.
If you’re near O’Hare — before a flight, after a long week, or just because — make the reservation. Show up. Enjoy every bite.

We got the sliders, shrimp cocktail, steak salad, and twice baked potato. Portions are large and the food was really really good. I wanted dessert but they’re too large for two people and I’m from out of town so I couldn’t take the food home so easily. Highly recommended the shrimp cocktail. That was my favorite dish of all of them!
The drinks are well made and they don’t skimp on the alcohol. I got the old fashioned and it was delish!
Lastly I love that there was free valet for going to the restaurant!
