I loved the attentive service and the flavorful, well-prepared food. Although they did not have any vegan options listed on the menu, the staff went above and beyond to create some delicious vegan tacos tailored to my dietary preferences. This place is striving for a modern/elevated twist on Mexican dishes. The menu options looked phenomenal. The chips and two salsas were fantastic…. But the food missed the mark. I ordered the shrimp and it was so tart/sour I could hardly stand it. My husband ordered the augukitoa steak and it had wag too much Worcestershire sauce. The portions were also not very large.
The room was weird with a massive ceiling making it feel like a warehouse.
The waiter was very friendly, however the service was very very slow for a non busy night.

Great atmosphere and food. The hostess seemed to be having a bad day and lacked energy. Once seated it took more than 20 before we saw the waitress for the drink order. It was not busy, so maybe it an oversight. Regardless, we were not in a hurry and everything was great after the bad start.

I had huevos divorciados for brunch. The picture doesn’t look great, but it was very good. Even the side of beans was worth eating. One day I will come back for some mezcal.

Maria Mezcaleria: Smoke, Spice, and a Perfect Taco Tuesday Flow

I stopped into Maria Mezcaleria for Taco Tuesday during Happy Hour (3–6 PM) and left completely satisfied — calm atmosphere, balanced flavors, and just the right amount of buzz from the cocktails.

I started with the Chile con Queso, a rich, molten white cheese dip that was perfectly creamy and just salty enough. The chips were thick but crisp, not greasy, and held up well to the queso without breaking. Three salsas arrived alongside — a smoky red, a vibrant green salsa verde, and a black bean dip. My personal ranking? Bean dip first (earthy and smooth), then the verde (bright, tangy), and lastly the red (bold, fiery, and full of character).

For my first drink, I ordered the Jamaica Mezcalita, a $6 Happy Hour cocktail made with Union Mezcal, hibiscus syrup, and fresh lime. The color alone could stop traffic — ruby red with a dried citrus wheel perched on top and a rim dusted with spice. The flavor? Beautifully layered. Smoky from the mezcal, floral from the hibiscus, and refreshing without being overly sweet. It’s the kind of drink that feels made for slow afternoons and good conversation.

My main course was the Street Tacos Al Pastor — five small corn tortillas packed with marinated pork, cilantro, onion, and grilled jalapeño on the side. The meat was seasoned and caramelized just right, with that perfect contrast between smoky char and juicy tenderness. They were simple, generous, and authentic — nothing gimmicky, just honest tacos that taste like someone cares about the marinade.

I also ordered a bowl of Esquites (corn off the cob) — creamy, tangy, and full of flavor. It came topped with chili powder and queso fresco, rich but balanced, the kind of side that makes you slow down for a second and appreciate how good corn can taste when it’s treated right.

To finish, I went with the Espresso Martini — my first one ever. And it was a knockout. You can really taste the espresso; the Kahlúa and vodka play in the background, adding depth and a touch of sweetness without masking that coffee punch. Smooth, chilled, slightly foamy on top, with three espresso beans as the finishing touch. I’d easily come back for that alone.

Service was relaxed but attentive — not overbearing, not distant. The vibe in the room around 3:30 to 4:00 was unhurried; just a few tables filled, music low, and everything arriving at a steady pace. It’s clear they care about presentation and consistency.

If I had to rate the experience, I’d call it a true 4.5-star visit — but I’m giving it five because everything delivered on what it promised. Great flavors, balanced drinks, and thoughtful pacing. It’s a place that doesn’t need to shout; it just quietly gets everything right.

Verdict: Come for the mezcalita, stay for the tacos, and end with the espresso martini. That’s the perfect Maria Mezcaleria rhythm.

We were visiting from out of town and were recommended this place, so we were looking forward to our experience. That said, I believe this restaurant may be better suited for smaller parties—perhaps four or fewer—based on our visit as a group of ten.

When we arrived, the hostess seemed visibly irritated when we mentioned our party size, even though we were polite and patient. Once we were seated, it took quite a while for our server to greet us and take our drink orders. Unfortunately, the service throughout the meal continued to be slow and inattentive. The server appeared overwhelmed and seemed frustrated when we made standard requests such as refills or additional items. At times, she expressed that she was too busy and had other tables to attend to, which made us feel like an inconvenience rather than welcomed guests.

We understand that large parties can be challenging, especially during busy hours, but a little more communication or a heads-up would have helped us adjust our expectations. If staff are feeling overwhelmed, it might be helpful for management to reassess how tables are assigned, particularly for servers who may be struggling to keep up. We hope this feedback is helpful and contributes to a better experience for future guests.

We always enjoy eating here. Food is great, parking is tough for husband who is handicap and has to walk from the paid parking behind the hippodrome or when there is event traffic, you have to park even further away. The staff is small so be patient, sometimes it takes a minute to get to you. We love the salsa and black beans with delicious chips. My husband had the Parillada and I enjoyed the Steak Aguachile for the first time and really liked the flavor. It doesn’t not come with rice and beans but that was ok for lower carbs. I normally enjoy the Carnitas as well. Overall, we still enjoyed our meal and happy hour drinks from 3-6 pm

My husband and I had already been to another happy hour spot, but we decided to pop in here before dinner and immediately wished we had just made this our only stop of the night. We ordered the mezcal flight and ended up chatting with the bartenders about the ones we loved on our recent trip to Mexico City. They went out of their way to match us with brands we’d like and made the whole experience so fun. Everyone was warm and welcoming, which made us want to stay even longer. Our only regret is not having time to try the food. If you are into mezcal, this place is a must.

We arrived in Waco with an appetite for quality Tex-Mex food, and Maria Mezcalaria far exceeded our expectations. The meals were entirely perfect, from the vegetarian enchildadas and rice to the carnitas to even the chips served as an appetizer. Each one was authentic, prepared with love, and quite cost-effective; we haven’t had such a cheap, yet delicious meal in a very long time. Beyond the food, the atmopshere and service was impeccable, and our waitress was so engaging and patient as we made our choices. If we come back to Baylor, Maria Mezcalaria will defniitely be our first stop. Highly recommend!
