I bought four Al pastor tacos and one horchata for $16. You have to ask to select which tip option you want but other than that the food and service was spectacular! Well worth it for me.
Update 6/18/25:
I decided one day to try a side enchilada with asada the other day and it was amazing. I love the potatoes! I’ve taken all of my friends here, they all come here regularly now.
Today, I bought a full enchilada meal and I’m so impressed. Yum!

I have been going to this taco truck for a long time and unfortunately things have shifted a lot. I no longer get the correct meat that I order in my tacos. If I order buche, I get something else. If I order carne asada I get something else. One time I got Al pastor when I didn’t order it. It’s also become a lot more expensive. Today my friend ordered a quesadilla that we thought was going to have steak in it because it was $15 but it was undercooked tortillas with cheese slapped in it. I have added a picture for reference.
Unfortunately, today was my last day going there and my friends agreed. So sad

Best Taco truck i had so far, flavor is perfection with generous portions, with their hot salsa(the red sauce) the Taco flavor enhanced 2x times. 10/10 must try if you are near liberty lakes or valley!! Support your local businesses!!

This place was amazing, it has been forever since I’ve been able to have ACTUAL authentic food. The burrito was awesome, and I’m so glad that they know how to make a good horchata. The only thing I disliked was how I had a giant piece of ice in my drink that blocked the straw, so I had to go home and take it out with a spoon, which also showed the actual amount of drink I had left. Other than that, absolutely amazing!

The lone food truck, Aguila Y Sol, at Barker and Appleway in Spokane Valley plates and rolls up big flavor and portions with chef-quality love and attention to detail. Aromatics and heat in the salsas will flamenco your taste buds, while the sweet, creamy and cooling flan sweeps your cares away. The menu is diverse and complex, and I’m eager to return for more food magic from Aguila Y Sol. PS, come here when you’re not in a hangry hurry, this kind of food takes a smidge more time to prepare, and it’s with the wait!
